Meet TamiJoy

TamiJoy was raised up by her maternal Irish grandparents in the US. Her love for the outdoors came from toddling around with her Irish grandfather, born and raised in Ireland, where she now resides. He instilled in her an appreciation to respect the land, whatever you do, do it to the best of your ability and steady and slow always wins the race. Her grandfather was an avid gardener, and he enlightened her with the knowledge that food produced by one's own hand is the healthiest, tastiest and should be shared with anyone and everyone that comes to the table. Then a visit to Ireland to see her grandfather’s home, that he often talked about, made her realize where she would like to live. As as fate would have it, TamiJoy and her spouse, Rocky, bought a famine stone cottage next door to the family home and restored it to a beautiful home overlooking the sea, filled with travel memorabilia and surrounded by acres of farm land.

TamiJoy learned to cook from her two grandmother's, who taught her the basics of home cooking. And over the years, she developed her own bespoke methods using only the finest, locally sourced ingredients, including her own organically grown vegetables and fruits along with locally sourced seafood and meats.

What to expect

Please note menu might vary. If there are particular dishes you are interested in trying, please include your request in the booking form.

In-home meal: (1-12 guests) Start your experience with a tour of TamiJoy’s farm, to see what grows beyond the wild Atlantic west coast of Connemara next to the sea. Tour the gardens and polytunnel, where organic vegetables, fruits, herbs and flowers are grown using seaweed as the fertilizer, a long-held custom of the area. Also, pay a visit to the grazing KuneKune pigs and Zwarble sheep! The meals prepared at the farm use ingredients sourced from the farm, locally sourced seafood and seaweed that was harvested locally. A few dishes that you may try are tomato basil bisque with their signature seeded seaweed crackers or a charcuterie board with their signature seeded seaweed crackers and locally sourced lobster or in season seafood with in grown vegetables or mushroom risotto and seaweed Irish brown bread. End your meal with dessert such as chocolate or baileys Irish cream carrageen pudding with traditional shortbread cookie or Irish apple pudding cake with caramel sauce.

Cooking experience: (1-12 guests) After the farm tour, join TamiJoy in her stunning open kitchen that has breath-taking views of the sea, for your cooking class. Learn to cook an appetizer or dessert plus main in your two-hour cooking class. The class can hands-on or a demonstration depending on your preference, so please let TamiJoy what you'd like. You will cook using the freshest ingredients picked from the farm. While you cook, TamiJoy will share her well tested recipes, her tips and tricks and will also dive into the benefits of seaweed and how you can incorporate it's many uses into your meal. After cooking, share the meal you helped prepare at the dining table inside the stone cottage or the outside dining patios, weather permitting.

Notes: TamiJoy can offer a vegan, vegetarian and gluten free meals. If you have any dietary restrictions please let her know in advance, while booking this Galway cooking class online.

We gained so much knowledge regarding the different seaweeds and abolone. Enjoyed a delicious lunch too. Would love to see the green algae tempura available to consumers!
