Meet Alessio

Alessio is a fun, warm and welcoming host who is excited to share his local cuisine and Fiorentino traditions with travelers. He has a wide repertoire of Florentine dishes that you may not see in restaurant menus. Alessio studied economics while he was at University and worked at a bank but quit after a few years to follow his true passion – cooking! He was keen to use the creative part of his brain and flex his artistic muscle and diligently taught himself to cook from cookbooks. He worked his way up to head chef at a few restaurants before he became a private chef. Alessio was very close to his grandfather growing up and cooking brings back fond memories of himself as a young boy helping his grandfather in the kitchen. Enjoy a memorable culinary experience with this Fiorentino cooking expert!

Alessio sometimes hosts with his friend and colleague, Livia, who also has a long history in the food industry. She is a private chef passionate about preserving the traditions of Italian food and culture; she is dedicated to learning how to make the pastas taught by grandmothers around Italy!

What to expect

In-home meal: (1-6 guests) Meet your host Alessio at his simple and sunlit apartment and join him at his dining table to enjoy a typical Fiorentino meal in a casual environment. Your homemade meal might include dishes such as an antipasto of crostini crostini di fegatini (chicken liver pate served on crusty bread) or a seasonal segato di carciofi (artichoke carpaccio with pecorino), a main of ossobucco alla Fiorentina (braised veal) or pollastro affinocchiato (braised chicken with fennel), and a pasta like pappardelle ai fungi (mushrooms) or risotto al nero (squid ink) with a typical Florentine vegetable side dish. Your meal will conclude with a dessert of torta della nonna (cream pie) or schiacciata alla Fiorentina (orange sponge cake).

Cooking experience: (1-6 guests) Join your host Alessio in the kitchen of his apartment where he spends most of his time. You will learn to cook a regional Florentine meal from recipes that he has perfected over the years. Your hands-on cooking class will last about two hours. You will learn to cook three dishes from scratch such as an antipasto, main of meat or a pasta, and a dessert. As you cook together, enjoy learning about the skills and techniques that Alessio has honed over the years before you sit down at the table to share the meal you helped prepare with him. If there is a specific Fiorentino dish you'd like to learn, please let Alessio know when making your booking and he'd be happy to teach you how to prepare it. Alessio is excited to share his culture through food and offer an authentic/traditional cooking class in Florence. He can also accommodate a vegetarian diet during this Florence cooking class.

Market visit: (1-6 guests) Meet your host Alessio at the Mercato Centrale market, a large, covered market housed in a historic 1874 Art Deco icon and glass structure that sells wonderful meat, seafood, charcuterie, fruits and vegetables to Florentines. It’s the central market of Florence and one of the most interesting and colorful markets of Europe where you will find locals and tourists alike. Walk through the market and explore with your host local and regional produce sold by their favored vendors at the market. You will purchase a few ingredients that you will use during your cooking class after the market tour. Your market tour will last about one hour before you hop into a bus or car with Alessio for a 15-minute drive back to his apartment.

We (2 of us) met Alessio at his apartment ready for an authentic cooking experience. He buzzed us into the building and enthusiastically met us in the stairwell. We entered his apartment; he offered us aprons and we discussed menu options. We settled on a meal of multiple tapas, risotto, wine and desert. While Alessio instructed and educated us on our meal details we chopped, stirred, brushed, measured, fried, baked, toasted, roasted, zested, and grated all of the ingredients. Alessio spent time demonstrating techniques that included the best way to cut tomatoes, cut/bread/fry mushrooms, measure ingredients etc. We prepared: Tomato Bruschetta, Pumpkin Mushroom Risotto, Stracchino (Pork & Cheese Crostini) and Mushroom Crostini coupled with Prosecco. For dessert: Schiacciata A La Florentina and Vin Santo. Alessio is serious about sourcing his ingredients: Parmesan cheese, Mushrooms etc. Alessio is a mushroom expert who travels hours hunting, identifying and self harvesting multiple varieties of mushrooms from Italian forests. I wish I could give more than 5 stars! We had an amazing time with Alessio. He taught us the skill behind making pasta and the versatility of bruschetta! Together we created and shared a meal that really demonstrated the beauty of Florentine Cuisine. He was a gracious and welcoming host. We showed up 30 mins early by accident and he immediately let us inside and got us started. If you're in Florence-- book this experience with Alessio. Ask to make his grandmother's orange cake!!

Our family (two parents and 2 children- 10 yrs and 14 yrs) loved our class with Alessio! It was the perfect addition to our time in Florence! We had a truly exceptional time cooking with Alessio on our trip to Florence! First, logistics: Communication was easy and responses prompt, and the apartment was an easy cab ride from the city center. There is a single flight of stairs to climb; not difficult at all, but maybe worth noting for some. Alessio's kitchen was comfortable and well-equipped, and Alessio himself was an excellent teacher and host! I was nervous about an Italian cooking class being too advanced for me, but our host made it accessible, fun, and ultimately delicious (we left STUFFED and can't wait to replicate the recipes at home!) Felt more like a relaxing evening prepping dinner with a friend than a proper stuffy cooking class. Can't recommend enough-- an excellent experience and really fantastic host!!

We recently traveled to Florence and my wife - an Italian and a great cook- wanted to take a private cooking session, my thoughts not for me, as it turned out I did most of the prep and pasta making with a terrific host Alessio in his apartment. It was what we hoped for and expected a hands on lesson with a homey relaxing atmosphere. The closest I come to cooking is a grill and I would do this again in a heartbeat in fact my new role at home is pasta making even though I am Italian a first for me.     You can cancel your reservation up until 48 hours before your experience for a full refund minus a 3% processing fee. Experiences within 48 hours are not refundable.

    If you have a question for your host, you can include a note in the field "Write a note to your host" during the booking process. Once your booking is confirmed, you will be emailed your host's direct contact information and you will also be able to message the host through your profile. You can always cancel your booking and receive a full refund 48 hours or more before your experience. If you have other questions you can also email us at reservations@travelingspoon.com.

    Most of our hosts are able to accommodate dietary restrictions and allergies, including vegetarian and gluten free options. For vegetarian travelers, we have an icon on each host profile to indicate whether that host can also offer a fully vegetarian menu. There is a section in the booking form to note any allergies or dietary restrictions which will be sent directly to your host.

    Some hosts offer alcohol as an optional add-on for travelers who are of legal drinking age. Pricing for alcohol is visible on the host profile page and includes one to two glasses of wine, beer or local alcohol.

    Have a flight or other tour planned and can’t make the timing provided? If the timing listed on the host’s profile doesn’t work for you, our hosts can often accommodate timing changes. Because all of our experiences are private our hosts are happy to tailor experiences to meet your travel needs. Simply note your request in the booking process.

    Your card will not be charged until your host accepts your booking. Typically hosts respond to bookings within 72 hours. In the event your host is unavailable on your selected date and your host rejects your booking your credit card will not be charged.

    Your host's detailed contact information, including their phone number, address, and direction notes, will all be provided immediately upon successful confirmation of your experience (after your hosts accepts your booking and your credit card is successfully processed). This information will be emailed to you to the email address you used to sign up, and will also be visible on your Traveling Spoon profile.

    All prices are noted per person prices unless otherwise specified. Transportation is typically charged on a per car basis. Children aged 5-11 are 50% off, and infants aged 0-4 are free. Hosts set their own prices and Traveling Spoon marks up the experiences; on average hosts receive over 70% of the price paid by the traveler.

    Some hosts offer transportation as an optional add-on for travelers. Typically this is round trip transportation with pick up and drop off at your hotel. Pricing is quoted per car. Specific instructions for transportation will be provided in your confirmation details when your booking is confirmed.

    Many of our hosts accommodate solo travelers. You can see if a host accepts solo travelers by looking at the traveler range found next to the experience descriptions on the host profile (indicated by the numbers in parentheses next to "In-home meal", "Cooking experience" and "Market visit").

    Most of our Traveling Spoon experiences are incredibly family friendly and can accommodate infants and children. If a host is unable to accommodate children that will be noted in the “Notes” section of their profile. Our child pricing policy is children aged 5-11 are 50% off, and infants aged 0-4 are free.
