Meet Christine

Christine has been working in food for well over 35 years - as a chef, teacher, nutritionist, consultant, caterer and more! She especially enjoys working with local and seasonal ingredients that have been used for centuries in Nordic countries. Her speciality is Danish cakes, cookies and sweets and is excited to share the rich traditions behind Danish cakes. Did you know that 22 cakes are protected by the European Union! Learn about Denmark, its history, culture and culinary traditions with this passionate food lover.

“Being a Traveling Spoon host would give me the ideal opportunity to combine what I like the most - food, cooking, hosting and sharing homemade food around the table.”

What to expect

Please note menu might vary. If there are particular dishes you are interested in trying, please include your request in the booking form.

In-home meal: (2-8 guests) Christine lives in a classic villa in Frederiksberg, a municipality in the center of Copenhagen. Her beautiful garden dotted with apple trees, edible flowers and herbs reflects her love for fresh ingredients. Christine’s cooking typically includes seasonal herbs, berries, fruits, vegetables, fish as well as rye bread and dairy products - ingredients native to Denmark. Christine is passionate and knowledgeable about food history and her mission is to engage you in the history and culture of Denmark that has a link to different parts of the country, from the berries eaten by the first settlers to the new Nordic kitchen.

Share a meal with Christine (and her family when they are around) of open rye bread sandwiches with a variety of of fish, meat and vegetables, garnished with a scattering of herbs, sprouts and homemade pickles. You will conclude your meal with homemade butter cookies and tea, coffee or hot chocolate.

Cooking experience: (2-8 guests) Join Christine in her kitchen and choose between two classes – Danish open rye sandwich (smørrebrød) making class or a Danish baking class. If you choose the Danish savory open rye sandwich class, learn to make 2-3 different kinds of sandwiches using historical herbs, berries, spices and seafood. If you choose the Danish sweet baking class you will learn to make one kind of butter cookie and one kind of konditor kager (an unique Danish cake variety). Please let Christine know in advance which class you prefer.

Market visit: (2-10 guests) Discover with Christine Torvehallerne, an urban, covered marketplace featuring stalls with local produce, gourmet foods, beverages and desserts. At Torvehallerne, you will find over 60 stalls selling everything from fresh fish and meat to gourmet chocolate and exotic spices, as well as small places where you can have a quick bite to eat. Walk around the market with Christine and learn about local ingredients used to cook Danish specialties. This experience is very educational, as Christine will provide you the cultural context and tell you the history behind the ingredients, dishes, and beverages. You will also sample a few fruits and local food during the market tour.

Food tour: (2-10 guests) Experience the Danish history of food by engaging all of your senses - sight, smell, touch and taste. You will discover six of her favorite food places in the city and hear interesting stories behind it. Christine says that every place has a story to tell which is interesting, funny and a gastronomic experience waiting to be discovered. On this unique tour, Christine will cover the history of food through the last 1000 years - from the Vikings to the modern Nordic kitchen. It is an educational, intriguing and joyful tour. Christine will meet you in central Copenhagen and you will walk for about 3 kms, mainly in the old part of Copenhagen. The experience includes food and beverage tasting - you'll get to taste a favorite cake of H.C. Andersen, try medicinal herbs from the medieval period, drink the Vikings favorite drink, and much more. (After your market tour, you will take a short metro ride (3 stops) and bus ride (2 stops) to Christine’s home for the rest of your experience (in case you've booked a cooking or meal experience too!)

Notes: Christine can offer vegetarian meals on request.

PERSONALLY VETTED REVIEW
A Traveling Spoon ambassador visited this host. Here is their personal review.

Our day with Christine was an absolute treat. Going into the experience, I had no idea what to expect, but she far exceeded anything I could have ever imagined. She was very patient with my friend and I while preparing our food for both lunch and dessert. We truly had the most amazing time. We loved all of our interactions with her and her family. Just the kindest, generous, down to earth people. There was absolutely nothing I didn’t like. This had to be one of the greatest experiences I have ever had while traveling to a new city. I can’t even begin to express how lucky I felt for the having the opportunity to meet and learn from Christine. My friend and I wouldn’t have changed a single thing. I wish I could do it all over again. It was the perfect time.
