Kavitha has been in the food business for many years and ran an Indian street food business in the outdoor markets of Brooklyn and Manhattan. She has also hosted and catered vegan and vegetarian events. Kavitha comes from a family of yogis and people who believe that the key to good health lies in good nutrition. She has first-hand seen the positive effects that simple tweaks in nutrition can have on a person's physical, mental and spiritual health, without compromising on taste or experience. Kavitha's cuisine is all about a simple, plant-forward lifestyle. She is passionate about teaching guests Ayurvedic-inspired cooking, especially to those who are looking to move towards meals that are planet-friendly, healthy and adventurous.   • 1 medium sized beet
  • 1 medium sized carrot
  • 12-15 fresh green beans
  • 1/4 yellow onion
  • 1-2 fresh small thai green chillies or jalapeno
  • 1 tsp split mung beans
  • 1 tsp split chickpea lentil
  • 1 tbsp fresh grated coconut (white flesh only)
  • 1/2 tsp mustard seeds
  • One pinch asafoetida
  • 3-5 curry leaves
  • 1 tbsp ghee
  • Salt to taste
  • 1 tbsp chopped cilantro
  • 1 ½ cup sorghum flour
  • 1/2 cup amaranth flour
  • Pinch of salt (optional)
  • 2-3 cups hot water

"I love dosas in restaurants, and I've actually tried to make them before from the internet and from books, but it never really worked. But this class did! They were delicious, and it was actually easier than some of the recipes I've tried before. The coconut chutney may be the best one I've ever had, and the spicy potato filling was really good too. Really first rate."

"Kavitha is patient, descriptive, and kind. She communicated well before and during the class. Before the course, she scheduled an additional session to prepare for the main session. While cooking together online she repeated directions and gave additional advice. She used two cameras to show her workspace and preparation.
