Fusina is a warm, open and welcoming Dutch host who loves to meet new people and learn about their culture. Fusina used to be the organizer of the Dutch cookbook competition and has authored many cookbooks about Dutch cuisine. A delightful storyteller, Fusina enjoys teaching travelers how to make and flip Dutch pancakes, a signature Dutch food that is relished throughout the country. Pannekoeken are a traditional Dutch treat - they are served sweet or savory and the Dutch have fond memories of this dish they grow up eating! Enjoy meeting an Amsterdam local and learning to make delightful Dutch pancakes.

2 cups (250 g) flour
2 ¼ cups (500 ml) milk
2 large eggs
1 apple (Goudreinet, a Dutch red apple that is not too sweet or moist or similar)
1/4 lb (100) pancetta
1 tsp sunflower oil (or other oil)
Butter for baking
1 ½ lb (600 g) potatoes
3/4 lb (400 g) endive
1/2 cup (100 ml) milk
1 tbsp butter
Salt and pepper to taste
1/2 lb (250 g) smoked pork, beef or vegan sausage
1/2 lb (250 g) fried bacon (optional)
1/2 lb (250 g) grated Gouda cheese (optional)
