Your host Mirella
Mirella is excited to teach this online class where she shares her love for and knowledge of preserving and canning. Learn how to preserve and can the best of summer produce so that you can savor the taste in the winter of a robust Italian tomato sauce on pasta or fruity, jammy goodness on buttered toast. The aim of Mirella’s cooking class is to share her knowledge about food, its preparation and its Florentine and Tuscan history. Mirella lives with her husband Stefano (her partner in life and in the kitchen!) in a small town called Antella located in the South of Florence. Together they teach you the secrets of Italian cuisine they learned from their grandparents and professionally.

  • Tomato sauce: 2 lb ripe tomatoes, extra virgin olive oil, basil, garlic, salt and pepper
  • Pesto sauce: 50 leaves basil, pine nuts, extra virgin olive oil, garlic, grated parmesan, salt and pepper
  • Jam, syrup and spirits: 3-4 lbs your favorite fruit, sugar, lemons, alcohol, black tea, chamomile tea and 8-10 herbs
  • Jam and pickled vegetables: 3-4 lbs your favorite fruit, sugar, lemons, zucchinis, eggplants, mushrooms, sunflower oil, oregano, mint, extra virgin olive oil, basil, garlic, vinegar, bay leaves, peppercorns and salt

"Mirella is a warm and gracious chef/hostess. Her gnocchi and ragu were a big hit with my family! The tiramisu was both delicious and elegant. Mirella provided very detailed recipes and suggestions for some advanced preparation which maximized the use of our time together. She confirmed our progress before proceeding to each new step. Mirella also provided many helpful tips as well as suggestions for modifying the recipes, making them extremely versatile. We enjoyed meeting Mirella’s husband Stefano and nephew, Daniele who participated also. Communication in English was perfect and the Zoom platform worked well."
