Your host Shuo
Shuo grew up in Beijing, China and has been living in the US since he was 17. He first started cooking after moving to the states away from his family when he missed his favorite childhood dishes. He started experimenting cooking dumplings and other family favorites, and has since become an avid home cook, designing his own modern chef's kitchen and now cooks everything from homemade dumplings to Indian cuisine. When not experimenting in the kitchen, Shuo works for a hedge fund doing life science investment. He lives with his wife Sophie, a lawyer, and their son Milo who is an avid eater. Shuo's mother Pingxi, a master dumpling maker, also lives with the family and will help during your experience.

  • 500 g (4 cups) all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 300 ml (1 1/4) cups room temperature water
  • 1 lb ground pork
  • 1 large egg
  • 1 cup green onion, chopped
  • 2 tbsp ginger, peeled and minced
  • 2 tbsp garlic, minced
  • 3/4 cup shiitake mushrooms, diced
  • 1/4 cup soy sauce
  • 1/4 cup Chinese black vinegar (or rice vinegar)
  • 1 tsp crushed red pepper flakes or chili oil
  • 1 tsp sesame oil
  • Vegetable oil (if pan frying dumplings)
