"Chamsi led a wonderful virtual-live class on Zoom to teach about 8 of us to make two of her favorite Moroccan dishes: Tajine chicken and eggplant "salad". The class was quite fun and participatory. I wish I had done a bit more chopping ahead of time to be better prepared, but Chamsi was very knowledgeable and patient and gave us time to ask our questions and catch up if needed. All told a wonderful experience and good way to spend a rainy quarantine Saturday morning!"

"The proof is in the eating. When I saw this class on the Traveling Spoon I went out and bought a tagine and registered right away. I visited Morocco over 50 years ago but never thought about cooking back then. Morocco is high on my list of places to visit (revisit) after Covid-19 is over. A big reason is for the food. So this class was already going to be good as I read through the descriptions and recipes. I like to do as much prep beforehand as possible so I can attend to the actual cooking so I was ready when the internet connection joined me to far-away Morocco along with 7 or 8 others, mostly from the US. Our connection online was good but the audio was weak and broke up on occasion. No problem. Chamsi followed her written recipe and I had it printed out before me. And I had done all the prep, so the audio issue didn't bother me. The class features two dishes, a tajine of chicken and olives and a warm eggplant salad called Zaalouk. The Zaalouk is eaten as a spread, either warm of cold. I tried it warm on a toasted naan bread and loved the comforting flavours of cummin and paprika with the soft texture of the eggplant and tomato. I didn't tuck into the tajine chicken until later in the afternoon, reheating it and adding some small Warba potatoes to soak up the ample juices. I recall Chamsi saying that in Morocco the juices are soaked up with a baguette. For sure next time I will do it that way and I will have prepared preserved lemons instead of fresh in hopes of getting even more authentic. Oh yes, and the olives. I will use green olives instead of kalamatas, although the kalamatas were good and didn't detract from the dish. The proof is in the eating and these two dishes will make it onto the 'make again' list for sure."

"Chamsi was wonderful. My whole family was in the zoom. She was so nice, took us into her beautiful kitchen and taught us about delicious Moroccan cooking. She taught us more than just the recipes, along with some good technique. Loved Chamsi!! She was so nice and charming. It was something fun to do during the Coronavirus and gloomy Wisconsin weather. "Our experience cooking Moroccan Tajine with Chamsi was delightful. It felt like an physical and intimate experience as we met her family and learned a bit about the history behind Moroccan Tajine as well as her own background. Her entire family was very friendly and welcoming. The cooking process felt professional and the pace was good. We enjoyed chatting with Chamsi, sharing stories and taking photos over Zoom. The final meal was amazing!! I’m sure this isn’t our last encounter with Chamsi. We hope there will be more Moroccan meal offerings in the future with traveling spoon. It was nice to meet you Chamsi!
