Your host Fotini
Fotini is delighted to teach guests how to make moussaka, one of the most popular Greek dishes and the epitome of Greek comfort food. In addition to being a cookbook author, Fotini is an economist, MBA lecturer, writer and independent journalist. She started cooking and experimenting with recipes when she was a university student in Thessaloniki. She loves cooking authentic Greek cuisine from the islands, with Cycladic dishes being her favorite. Fotini has traveled around the world, studying, working and traveling for fun. In addition to her passion for cooking, she also loves reading, gardening and classical music. Fotini loves to host and meet people and is passionate about sharing dishes from continental Greece and the Greek islands with her guests. As Fotini says, meals in Greece are a way to celebrate with guests over great discussion and music. She loves meeting people from all around the world and when she travels she makes it a point to taste the local cuisine. This passion for cooking and traveling has made her a collector and she has over 100 cookbooks in her collection.

  • 4 medium baking potatoes like russet, sliced into thin 1/4" rounds
  • 2 big eggplants, sliced into thin 1/4" rounds
  • 3 cups Greek olive oil
  • 1 lb (.5 kg) ground beef
  • 1-2 tbsp tomato paste
  • 1 can (14 oz) tomato sauce
  • 2 yellow onions, chopped
  • 2 cloves garlic, minced
  • 2 cinnamon sticks
  • 3 bay leaves
  • 1 tsp ground allspice
  • 5 cloves
  • 1/2 tsp hot paprika powder
  • 1/2 cup gruyere cheese, grated (optional)
  • 8 tbsp flour
  • 1 stick (250 g) butter (Fotini's family uses more for a richer flavor)
  • 4 cups (1 l) milk, room temperature or warm
  • 1 tsp nutmeg (or to taste)
  • Freshly ground pepper
  • Salt to taste
  • 2-3 egg yolks, beaten

"Loved this experience. Fotini was a great host and teacher. We got a history lesson that connected us in the food we were making. She was good at giving feeback and paced the dish making. She moved the camera around to give us multiple angles to see the cutting, what was cooking in the pots, and what we had to do next. Her husband helped to show us how to make the greek meatballs (SO DELICIOUS), so she could explain what to do while he showed us the steps. Also the eggplant dish was sublime. Highly recommend taking with class with Fotini. We've been telling all our friends to signup! We'll probably see you again Fotini."

"We have very different eaters at our house, some more adventurous than others. But we finally found common ground: Soutzoukakia. We really enjoyed our class, and we LOVED eating the results! Fotini explained that these Greek meatballs are her husband, Christo's, favorite dinner. And wow, he is right! We had a great time learning to make soutzoukakia, and we also made a delicious eggplant dish, topped with lots of Greek feta. We learned a lot, the ingredients were easy to find, and we are ready to take another class with Fotini in her kitchen!"

"We really enjoyed our class — and the food was absolutely positively delicious! Fotini and her husband, Christo, are lovely. We weren’t always keeping up, but Fotini did not rush us and was generous with her time. I have to admit that when I looked at the meatball and potato dish, it didn’t look that great. I never could have simply made it from the recipe. However, it smelled amazing while cooking and the finished product was really, really good — lovely flavours! And the recipients of the meal loved it, especially the eggplant dish which was a surprise to the two who said they don’t like eggplant. They do now!"
