Your host Reem
Reem is a self-taught cook, who grew up in Lebanon and moved to Australia in 2017. She had the pleasure of eating and learning how to cook delicious food cooked by her grandmother while growing up, and that made her fall in love with food. She enjoys cooking at home for friends and family, and even took a few cooking workshops to learn new techniques and international cuisines. Reem loves meeting people from around the world and it would be her pleasure to introduce them to Lebanese food and culture.

  • Zaatar man’oushe (flatbread with herbs)
  • Cheese man’oushe (flatbread with cheese)
  • Spinach fatayer (Lebanese spinach pie)
  • Sfeeha (Lebanese lamb pie)
  • Labneh (a dip made with Greek yogurt)

  • 2.5 cups All-Purpose flour
  • 1/2 cup warm milk
  • 1/2 cup water
  • 1 tsp salt
  • 1/2 cup canola oil
  • 1 tbsp active yeast
  • 1 tbsp sugar
  • Spinach mix
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 1 cup fresh spinach or frozen spinach, thawed
  • 1 tbsp sumac
  • 1 tbsp salt
  • Juice of 1 lemon
  • 1 tbsp pomegranate molasses (optional if difficult to find)
  • Cheese mix
  • 1 cup halloumi and/or mozzarella cheese, grated
  • 1 tbsp chilli paste
  • Zaatar mix
  • 1/2 cup za’atar
  • 1/2 cup olive oil
  • Meat mix
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1/3 lb (250g) minced lamb
  • 2 tbsp pomegranate molasses (optional if difficult to find)
  • 1 tbsp salt
  • 1/2 tsp all spice
  • 1/4 tsp cinnamon
  • 1 tsp chili flakes
  • A handful of pine nuts to garnish
  • 1 cup Greek yogurt
  • 1 tbsp salt

"Baking these sweet Lebanese pastries with Reem was a real treat! Anyone who thinks baking is too complicated should take a class with Reem to disprove this myth. Reem is very encouraging and she guided me through the steps patiently, and even shared some of the techniques she learned from her grandmother. She was detailed in giving instructions and made it feel like we were working together in her kitchen. Taking this class has been a delightful experience and gave me not only confidence in baking but also massive interest in Lebanese food and culture!"
