Your host Fabio and Annarella
Fabio and his girlfriend Annarella are passionate farmers who decided to take care of their families' lands 15 years ago. Meeting new people and cooking Sicilian cuisine brings them great joy! They are eager to share their love of Sicilian Mediterranean culture and its culinary traditions and to learn about people from around the world. They pride themselves on using traditional and organic methods to produce everything from extra virgin olive oil, almonds, citrus, breads, and jams from the fruits that they grow on their bio farm. Fabio shares with Corrado Assenzo (Caffe Sicilia's famed chef) a similar philosophy of farming. He serves dishes sourced from local ingredients and the meal is served as a "degustazione": a series of small dishes that include antipasti, seasonal vegetables, pasta, and fruits. Slightly different from what people might consider a traditional Italian meal, Sicilian cuisine is influenced by different cultures (French, Middle Eastern, Greek and Spanish, to name a few). Fabio and Annarella are farmers and food lovers who know how to grow and use the ingredients they have. They are excited to share their culture through food and to give you an appreciation of the true cuisine of their region.

  • 2 ribs celery, finely chopped

  • 1 can tomato sauce
  • 1/2 small can tomato paste
  • 1 tbsp fennel seeds
  • Salt to taste
  • 1/4 cup sugar
  • 1 bar melting chocolate

"Fabio and Annarella masterfully hosted our 15 person family, signing in from 7 locations. We absolutely loved our session and would 100% recommend them for any fun gathering or event. We have a loud family with varying levels of tech savviness, and Annarella and Fabio were able to seamlessly guide us through the session, accommodating each of our needs. The ravioli was delicious and authentic, with all of us agreeing we had never had Italian food like that before. Their set up and equipment (one screen on them one screen on the food) made it really easy to follow along with the cooking process. 10/10 recommend!"

"Fabio and Anarella had a great set up in their kitchen so we could clearly see them and the food. They did a great job engaging us as if we were there in person. It was a fun experience. My recommendation regarding the ingredients is to use regular flour if you can't find the type in the recipe. I ended up purchasing wheat flour because I thought it was closest to the kind of flour in the ingredient list. But I believe my white flour would have been better."
