  • 3 1/2 cups mixed vegetables (15 string beans, 2 medium carrots, 1/2 cup green peas, 1 medium potato, 1 green bell pepper, 10-15 bite sized florets of cauliflower)
  • 4 tbsp oil
  • 2 medium onion, finely chopped
  • 1 garlic clove, minced
  • 1 tsp ginger, grated
  • 4 green chilies
  • 1/2 tsp cumin powder
  • 1 tsp coriander powder
  • 3 cloves
  • ½ inch piece cinnamon
  • 3 whole cardamoms
  • 2 bay leaves
  • 2 tomatoes, diced
  • 1 cup (200 ml) coconut milk
  • 10-12 whole cashews, ground to a creamy paste with some water
  • 4 tbsp coriander leaves for garnish, finely chopped
  • 1 1/3 cup (250g) uncooked rice
  • 2 1/2 cups (or as needed) water to cook rice
  • 2 tbsp lime juice
  • 1/2 tsp mustard seeds
  • A sprig of curry leaves
  • 1 tsp chickpea lentil (chana dal)
  • 1 tsp black gram lentil (urad dal)
  • 1/4 tsp turmeric powder
  • 1/4 cup fresh grated coconut
  • 1/4 cup peanuts, fired or roasted
  • Salt to taste
