3 1/2 cups mixed vegetables (15 string beans, 2 medium carrots, 1/2 cup green peas, 1 medium potato, 1 green bell pepper, 10-15 bite sized florets of cauliflower)
4 tbsp oil
2 medium onion, finely chopped
1 garlic clove, minced
1 tsp ginger, grated
4 green chilies
1/2 tsp cumin powder
1 tsp coriander powder
½ inch piece cinnamon
3 whole cardamoms
2 bay leaves
2 tomatoes, diced
1 cup (200 ml) coconut milk
10-12 whole cashews, ground to a creamy paste with some water
4 tbsp coriander leaves for garnish, finely chopped
