Meet Antonio

Antonio, born and raised in a small town in the Yucatan, came from a large Mayan family and was a self-professed "bad kid". His father sent him to military boarding school as a child in the hopes of reforming his son. While Antonio was at boarding school, he fell in love with the kitchen, and the chef there soon realized that Antonio had a true talent and passion for food. Antonio nurtured that passion and has since opened his own catering business that employs over a dozen local staff. After working in Merida Antonio moved to Cancun and began working at resorts – as well as a kitchen in Los Angeles for a time! From growing up in a poor family that often had no food, Antonio worked himself up and eventually became the executive chef of a resort in Puerta Venturas. His catering company now provides private chef services for travelers in the Tulum area. Antonio is passionate about serving local Mayan cuisine, the food he learned to cook from his mother.

Cooking experience: (2-4 guests) Meet your host Antonio at the home that he built in Tulum, where you will be greeted with a welcome drink like chaya limeade. Start your authentic Mayan food experience with Mayan guacamole and sikil paak (tomato and pumpkin seed salsa) while Antonio describes the rest of your menu for the day. Next join him in the kitchen to learn to cook a traditional Mayan meal from recipes that he first learned from his Mayan mother and has perfected over his years working as a food professional. Your hands-on cooking class will last about two hours and you will learn to cook three dishes including a soup, ceviche and main course. For soup, you may learn to make sopa de lima (chicken and lime soup) or crema de calabasa yucateca (a creamy Mayan squash soup served in a squash bowl). For the main, you might cook pescado tikin-xic (Mayan fish marinated in adobo de achiote and sour oranges and steamed in banana leaves) or poc chuc (grilled citrus marinated pork), served with a side vegetable such as stir-fried chayote. Antonio enjoys creating traditional Mayan dishes with a creative personal touch. Antonio may have a sous chef join to help with prep and clean up.

Please note that Antonio may sit with you during your meal but might not eat with you as he prefers hosting. Depending on the time of day you might also meet Antonio’s wife and kids who may join you for your meal.

Market visit: (2-4 guests) Antonio will drive you to his local Tulum market where he regularly shops. This is a small covered market store where you will find a variety of Mayan ingredients. Please note that this is not a large market with several vendors but a store that sells local produce. Walk through the store and discover with your host regional produce, from a variety of mangoes and smoky peppers to the traditional naranja agria (sour orange) used in making Mayan marinades. Your market tour will last about 30 minutes.

Notes: Antonio can offer vegetarian and vegan-friendly meals. Please include your dietary restrictions, if any, in the reservation form when making your booking.

We took detailed notes during our experience and cooked his meal again for our travelling companions later during our vacation (everyone loved it). Antonio also went out of his way during our market tour to help us shop for our planned 9-person recreation as well as our booked 2-person experience. He was instrumental in calculating how much of each ingredient to get. He also gave our taxi driver instructions on which fish market to go to closer to our hotel (so the fish wouldn't spoil in the hot taxi ride) and what and how to order. During our cooking experience, Antonio shared that he really enjoyed his Travelling Spoon experiences because he was able to cook in the kitchen and talk directly to his clients, both of which he does not get to do consistently during his regular work as an executive chef. He has a true passion for cooking and teaching, and we appreciated how he was not only patiently teaching us, but his assistant as well.

FAQ

    You can cancel your reservation for free up until 48 hours before your experience. Experiences within 48 hours are not refundable.

    If you have a question for your host, you can include a note in the field "Write a note to your host" during the booking process. Once your booking is confirmed, you will be emailed your host's direct contact information and you will also be able to message the host through your profile. You can always cancel your booking and receive a full refund 48 hours or more before your experience. If you have other questions you can also email us at reservations@travelingspoon.com.

    Most of our hosts are able to accommodate dietary restrictions and allergies, including vegetarian and gluten free options. For vegetarian travelers, we have an icon on each host profile to indicate whether that host can also offer a fully vegetarian menu. There is a section in the booking form to note any allergies or dietary restrictions which will be sent directly to your host.

    Some hosts offer alcohol as an optional add-on for travelers who are of legal drinking age. Pricing for alcohol is visible on the host profile page and includes one to two glasses of wine, beer or local alcohol.

    Have a flight or other tour planned and can’t make the timing provided? If the timing listed on the host’s profile doesn’t work for you, our hosts can often accommodate timing changes. Because all of our experiences are private our hosts are happy to tailor experiences to meet your travel needs. Simply note your request in the booking process.

    Your card will not be charged until your host accepts your booking. Typically hosts respond to bookings within 72 hours. In the event your host is unavailable on your selected date and your host rejects your booking your credit card will not be charged.

    Your host's detailed contact information, including their phone number, address, and direction notes, will all be provided immediately upon successful confirmation of your experience (after your hosts accepts your booking and your credit card is successfully processed). This information will be emailed to you to the email address you used to sign up, and will also be visible on your Traveling Spoon profile.

    All prices are noted per person prices unless otherwise specified. Transportation is typically charged on a per car basis. Children aged 5-11 are 50% off, and infants aged 0-4 are free. Hosts set their own prices and Traveling Spoon marks up the experiences; on average hosts receive over 70% of the price paid by the traveler.

    Hosts typically respond to booking inquiries within 72 hours. If for some reason you have not heard from your host or if you have any questions you can always contact us at reservations@travelingspoon.com.

    Your safety and security are our top priority. To ensure this, Traveling Spoon personally vets 100% of all hosts, including an in-person host visit, to ensure each host and experience meets our strict quality requirements.

    Some hosts offer transportation as an optional add-on for travelers. Typically this is round trip transportation with pick up and drop off at your hotel. Pricing is quoted per car. Specific instructions for transportation will be provided in your confirmation details when your booking is confirmed.

    Many of our hosts accommodate solo travelers. You can see if a host accepts solo travelers by looking at the traveler range found next to the experience descriptions on the host profile (indicated by the numbers in parentheses next to "In-home meal", "Cooking experience" and "Market visit").

    Most of our Traveling Spoon experiences are incredibly family friendly and can accommodate infants and children. If a host is unable to accommodate children that will be noted in the “Notes” section of their profile. Our child pricing policy is children aged 5-11 are 50% off, and infants aged 0-4 are free.
