Meet Hajar

Hajar and her mother Aicha love hosting lunch and dinner parties. Passionate home-cooks, they experiment with new recipes and work to perfect family favorites that have been passed down from Aicha's mother. Hajar is a stay at home mom of two young children and delights in preparing cooking traditional, flavorful meals for her family. Aicha and Hajar present a selection of authentic every day Moroccan dishes that showcase a mix of spices and balance of sweet and salty flavors. In keeping with Moroccan tradition, guests are greeted welcomed in their back garden with a glass of mint tea.

What to expect

In-home meal: (1-6 guests) At Hajar's table you will enjoy a typical Moroccan family meal, including some of her favorite dishes. You might get to try her juicy, flavorful chicken tagine with olives and preserved lemon or her couscous with chicken, sweet onions and raisins. You'll sample a variety of side dishes such as her warm salads like zaalouk (eggplant) or tchoutchouka (bell peppers), a Moroccan salad, potato salad, tomato salad, and for dessert sefa (vermicelli with raisins, cinnamon and powdered sugar).

Cooking experience: (1-6 guests) Roll up your sleeves and join Hajar and Aicha in the kitchen to learn to prepare a traditional Moroccan meal. You will learn to make 2 to 4 dishes from scratch, which you will later enjoy with a few dishes they have prepared in advance. You can expect the cooking lesson to last about 2 hours.

Market visit: (1-5 guests) Meet Hajar at her home before you drive together to the Badr Market. This is an authentic local market or souk with stalls selling fresh fruits and vegetables, spices, olives, fish, meat, and everything else you need to prepare a Moroccan meal at home. She'll show you some of her favorite vendors where her family has been shopping for many years.

Notes: Hajar has two young children (ages 2 and 1 year old). They might be present during your experience.

Traveler reviews

My boyfriend and I have now participated in two separate traveling spoon classes in two separate cities (country/continent) and we're highly pleased with both! The intimate connection we made with the culture through our host and most importantly the food were the highlights of each of our trips. Hajar and her family were very welcoming and provided a great experience for us! - Jennifer

This was a fantastic experience - the best moment of my entire trip in Casablanca. Bravo! Hajar and her family were so welcoming and gracious. I can't wait for my next time. The Tajine was my favorite dish! - Mark

Hajar and her Mom were amazing hosts! We had a great time, learned a ton about Moroccan cooking, culture, and life. They were wonderful hosts - made sure we comfortable, taken care of, and extremely well fed. It was definitely the highlight of our trip! Spending time with Hajar and her family gave us a wonderful glimpse into the life of Moroccans. We enjoyed it tremendously and will recommend traveling spoon/Hajar to all of our traveling friends! We spent an evening with Hajar and her Mom learning about Moroccan cuisine - and the local culture. It was definitely the highlight of our 2 week trip to Morocco. We cooked chicken pastilla, a wonderful beef dish, eggplant and tomato dish - wow! We learned how the flavors combine and complement each other... but, truly - the best part was getting to know our hosts! The evening flew by - great conversation, wonderful food... it was over way too fast! - Nadia & Stu

Hajar wanted our meal to reflect everyday Moroccan cuisine, and we couldn’t be more grateful. Her food was fresh, flavorful, and worlds away from what we had tried in local restaurants. We had such a lovely time eating and chatting that we nearly missed our train! We’re so thankful to Hajar for welcoming us into her home and for sharing her food and her nuanced perspective on Morocco. Without her, we would never have known how tasty and unique Moroccan food can be. - Heather, Traveling Spoon Ambassador
