Meet Fotini

In addition to being a cookbook author, Fotini is an economist, MBA lecturer, writer and independent journalist. She started cooking and experimenting with recipes when she was a university student in Thessaloniki. She loves cooking authentic Greek cuisine from the islands, with Cycladic dishes being her favorite.

Fotini has traveled around the world, studying, working and traveling for fun. In addition to her passion for cooking, she also loves reading, gardening and classical music. Fotini loves to host and meet people and is passionate about sharing dishes from continental Greece and the Greek islands with her guests. As Fotini says, meals in Greece are a way to celebrate with guests over great discussion and music. She loves meeting people from all around the world and when she travels she makes it a point to taste the local cuisine. This passion for cooking and traveling has made her a collector and she has over 100 cookbooks in her collection.

While you sip a welcome drink, Fotini will tell you about traditional Greek cuisine, considered one of the healthiest diets in the world owing to heavy use of vegetables, Greek olive oil and cheeses.

Gather with Fotini at the dining table to share a selection of traditional dishes from Asia Minor such as melitzanosalata (smoked eggplant salad), keftedakia (meatballs with potatoes), pastitsio (baked pasta dish that contains ground beef and béchamel sauce), strapatsada (scrambled eggs with tomatoes onion and peppers) or the famous Greek moussaka (baked eggplant with ground beef and bechamel sauce). For vegetarians or guests who are interested in something very different, Fotini can cook for you recipes of Greek Orthodox monks, which includes dishes like spicy eggplant baked with cheese.

PERSONALLY VETTED REVIEW
A Traveling Spoon ambassador visited this host. Here is their personal review.

Fotini's food is what you expect to eat on a Sunday "family get-together" lunch. Very yummy and has that mouth-savouring quality and comfort. It could be your mother or grandmother in that kitchen cooking your favourite dish.

This was one of our favorite activities of our whole trip to Greece! My mom is of Greek heritage and cooks lots of Greek food at home, but Fontini took time ahead of our visit to put lots of thought into creating a very unique menu that would show us more rare types of Greek recipes from the islands, as well as educate us about the history of Greek cuisine. She and her partner were so welcoming! They were wonderful hosts in their beautiful apartment, made us completely comfortable, the food was delicious, and they were great teachers. Plus she is such an interesting person, we had wonderful conversation over dinner! Overall it was an experience that will last a lifetime and we would love to return the favor if Fontini ever visits Chicago!

Fotini made us feel right at home from the very moment we entered her home. The food we prepared together was delicious, and her recipes were very simple and easy to follow. Highly recommended!

I am Greek-American, and last night I enjoyed not only the best meal I've had since I arrived in Greece a month ago, but also I had the pleasure of spending the evening with the warm, welcoming and multi-talented Fontini. Fontini greeted me with an "ouzaki" and some nibbles of fresh grape tomoatoes and stuffed olives. From there, we began a non-stop conversation, encompassing everything from the provenance of the traditional recipes we were making to the current state of the euro. While I'm not much of a cook, Fontini gave me just enough to do--chopping vegetables and keeping an eye out on the frying eggplants--that I felt totally comfortable and that I had contributed to our meal. We ate at her elegantly set dining room table and topped off the meal with the most refreshing dessert, strained yoghurt mixed with rose spoon sweet. We lingered over coffee, never finding ourselves at a loss of subjects to converse about. I was treated to my Traveling Spoon experience by my colleagues on the occasion of my retirement in March. I can honestly say it was one of the most memorable gifts I have ever received in my life.

I arrived Fotini's house earlier but Fotini warmly welcomed me who was an only attendee on the evening with home-made organic wine and handmade menu card. She was wonderful host and shared 5 authentic Greek dishes which were all delicious and home-style cooking! After we cooked dishes, we had tasting time together at her lovely dinning table and shared lots of stories about our different cultures. When we all finished, I felt as like we have met before for many years! Also she sent the recipes by email on the following day attaching other famous Greek dishes' recipe as well. That was absolutely memorable experience and I'll come back to her again if I visit Athen in the future.

Our family (two adults and a 15-year old) had a great time cooking and eating with Fotini. She picked us up from our hotel and took us to her apartment where we prepared a variety of tasty dishes, several of which we now plan to make at home. We snacked, had a little wine, and sat down to a nice long meal where we chatted about food, culture, politics, economics, and many other things! We exchanged emails and look forward to following Fotini's blog in the future. Overall the experience was very relaxing and a really nice change of pace after so much restaurant eating during our travels. We've never used Traveling Spoon before, but we certainly plan to do so again.

My husband and I visited Athens the end of October and as one of our tour activities we selected a taste of the Greek Islands in Athens. We were not sure what to expect as we had not done this before. Fotini is a wonderful hostess who made us feel comfortable from the moment we arrived until we left. We cooked a wonderful meal. The food was amazing and I will be cooking these dishes at home. Our hostess made the cooking experience so easy. All the dishes were well-timed and extremely delicious. We cooked an array of dishes such as egg plant dish, soup, and a main course with meatballs. Fotini not only has a sense of humour, she is also engaging and at one point we were rolling with laughter. This was an excellent experience and we now have a friend for life. This is an experience that I highly recommend.

It was a great experience. Fotini our host was gracious, well read and very cultured. The food we cooked with her was delicious and so fun to make. I would definitely do it again! One of my favorite experiences in Athens!

It was easy to get to Fotini's apartment from our hotel in the city center using the metro and the tram. We arrived a little early for our lunch appointment and it wasn't a problem at all. Fotini invited us into her home and offered us welcome drinks. I was coming down with a cold so she made me some hot tea. After the introductions, we were handed aprons and put to work chopping vegetables and stirring pots. Fotini is a delightful host and we spent our time in the kitchen chatting away about all sorts of topics. When we were finished cooking we settled down at her dining table to enjoy the delicious meal we had prepared. We had a salad with mint dressing that we prepared fresh, soup, olive bread with a parsley based spread that we made fresh and the main course of village sausage with hilopite pasta in tomato sauce. We loved our time with Fotini and best of all we now have a new friend in Greece.
