Meet Yuca

Yuca comes from a family of farmers from the north of Japan and she grew up eating locally grown food. She learned most of her cooking from her mother and later started experimenting on her own. Yuca worked as a food writer in Toronto and New York for a few years before returning to Tokyo where she worked at a fermented food and vegan restaurant. She currently offers healthy Japanese cooking classes to share more about Japanese food and lifestyle with travelers. She also creates new recipes for overseas media and films videos for her YouTube channel.

In-home meal: (1-7 guests) Yuca wants to share her passion for Japanese food through her cooking. She will welcome you with a smile to her modern home in the city centre which has a spacious kitchen studio. While you sip on green tea, Yuca will share an introduction to basic Japanese food from a cultural and technical perspective. You will learn everything about miso with a miso degustation about Japanese seasoning basics, how to set a Japanese table, and even small details like why rice is always placed on the left hand side. Yuca is a wealth of knowledge and looks forward to sharing her knowledge with you. Join her at the dining table to share an authentic meal that people in Japan eat on a daily basis. Some of the dishes you may try include sushi, tempura, gyoza (dumpling with minced pork and vegetable stuffing), ramen, okonomiyaki (Japanese style savory pancake), rice, miso soup, tonkatsu (pork cutlet) and chicken nanban (fried chicken).

Cooking experience: (1-7 guests) You will join Yuca in her bright and spacious kitchen to learn traditional Japanese cooking techniques. The cooking class is professional and at the same time very friendly. Most of the recipes are easy and simple so that you can recreate it back home. You will help Yuca prep everything before you start cooking together. You’ll learn how to make a perfect dashi (broth base of everything in Japanese cooking), Japanese omelet and sesame paste seasoning using traditional Japanese utensils. Your cooking class will last for 1.5 hours and you will learn to prepare 4-5 dishes. After the cooking class you will sit down, chat, and enjoy the culinary creations together over a glass of local sake.

Market visit: (1-7 guests) The market tour that Yuca offers is a "supermarket" tour. Yuca will accompany you to a local super market, a 5 minute walk from her home. She will take you to the local supermarket after the cooking class and meal, and will explain the different ingredients used in Japanese cooking and seasoning, some of which you will have already used in your class. Yuca can help you buy ingredients and souvenirs to back home from Japan if you wish.

Notes: Please note that one way transportation from Tabata station to Yuca's place as well as a sake tasting is included in the price.
