Meet Marcella

Marcella has cooked for her friends and family for her whole life and dreamed of cooking professionally. She learned traditional Italian recipes from her mother, and through her dedication, practice in the kitchen and by taking cooking classes. She has a true gift for cooking and is easily able to replicate flavors of dishes she tastes in restaurants. Her son's friends say that "there is no restaurant in Rome that is better than Marcella's food!" Marcella adds a creative touch to traditional Neapolitan, Roman and Umbrian cuisine to make it her own. For instance, she took the traditional Roman carbonara that is made with egg and recreated this dish with cream of pistachio that renders a nutty and beautifully aromatic note.

Marcella does not speak English but hosts with her husband Marco, and English speaker, who is journalist and TV producer. When Marco is not available a friend will act as your translator. Mostly, however, she communicates through the language of food and love.

What to expect

In-home meal: (2-6 guests) Marcella prepares a range of dishes that have influences from Rome, Umbria, and Naples. She has a thorough understanding of the different nuances of regional Italian cuisine and liked to blend them to create unique versions of classic dishes. Marcella says her favorite thing to cook is dessert, but she is adept at preparing all courses of the meal.

The meal will begin with an appetizer of tris di bruschette (a trio of canapes - toasts topped with fresh Roma tomatoes, crema di melanzane (creamed eggplant), or a Tuscan-style chicken spread.) The primo (first course) will be a pasta dish, such as Roman spaghetti carbonara. The secondo (second course) will be a meat dish, perhaps her succulent Umbria-style chicken. The contorno (side dish) is a seasonal vegetable or fresh salad. The meal concludes with one of Marcella' speciality desserts, like her ricotta pie topped with home-made orange marmalade. The meal is served with olive oil produced by the family, bread, bottled water, and red or white wine (optional). Tea or coffee will be served with dessert. Note that the menu will vary based on the season.

Cooking experience: (2-6 guests) In her small but efficient kitchen, Marcella will show you how to prepare one dish during a cooking demonstration. Marcella will show you some of her some of her favorite cooking tips and teach you one of her favorite simple recipes.

Market visit: (2-6 guests) On Saturday and Sunday mornings Marcella will take you to her neighborhood open-air market, which is about 10 minutes away. Marcella will introduce you to the local produce and ingredients for sale. You'll spend about 45 minutes at the market, according to the queue, and might pick up a few ingredients to be used in your meal.

If you book a dinner experience Marcella will take you to Eataly, the gourmet Italian superstore. You'll spend about an hour exploring the store and learning about some of Marcella's favorite products.

Whether you visit the farmer's market or Eataly, once your market visit is complete you will return to Marcella's apartment and help her create a delicious Italian meal. Marcella will show you how to prepare the full meal so you can see all of the cooking steps and learn how to recreate the meal in your own kitchen.

Notes: Marcella does not speak English so she will arrange for a friend to join as a translator. Marcella speaks French fluently and can host guests who are French speakers without the aid of a translator.

While Marcella herself is from the south, her cooking combines techniques and recipes from different regions, and eating with her will give you an appreciation for the culinary variety that exists within Italy. Her cooking stays true to tradition but is infused with her own creativity, like adding ground pistachios to carbonara to give the classic dish an unexpected twist.     You can cancel your experience 48 hours or more before your experience date and receive a full refund. To request a cancellation once you have made a booking simply log in and click the "Request Cancellation" link from the bottom of your booking. Your refund will be processed immediately (note it can take up to 10 business days for this refund to post to your credit card statement). Please note that for cancellations within 48 hours of your experience we unfortunately cannot offer a refund; this is because our hosts typically purchase food and begin their preparations up to 48 hours before the experience.

    Most of our hosts are able to accommodate dietary restrictions and allergies, including vegetarian and gluten free options. For vegetarian travelers, we have an icon on each host profile to indicate whether that host can also offer a fully vegetarian menu. There is a section in the booking form to note any allergies or dietary restrictions which will be sent directly to your host.

    Once you request a booking you can message your host directly to ask any specific questions. Your messages will be emailed directly to the host and any responses will be forwarded to your email and can also be seen on the Traveling Spoon website.

    Your card will not be charged until your host accepts your booking. Typically hosts respond to bookings within 72 hours. In the event your host is unavailable on your selected date and your host rejects your booking your credit card will not be charged.

    Your host's detailed contact information, including their phone number, address, and direction notes, will all be provided immediately upon successful confirmation of your experience (after your hosts accepts your booking and your credit card is successfully processed). This information will be emailed to you to the email address you used to sign up, and will also be visible on your Traveling Spoon profile.

    All prices are noted as per person prices unless otherwise specified (typically transportation is charged on a per car basis, but otherwise all prices are per person).

    Some hosts offer alcohol as an optional add-on for travelers who are of legal drinking age. Pricing for alcohol is visible on the host profile page and includes one to two glasses of wine, beer or local alcohol.

    Some hosts offer transportation as an optional add-on for travelers. Typically this is round trip transportation with pick up and drop off at your hotel. Pricing is quoted per car. Specific instructions for transportation will be provided in your confirmation details when your booking is confirmed.
