Meet Juan Camilo and Jose

Camilo and his Uncle Jose love cooking Colombian food together. Camilo and Jose represent a new generation of Colombians who are working to introduce their country’s rich culture and cuisine to the world. Camilo is a professional chef eager to showcase the richness of Colombian gastronomy as well as the flavors that his mother and grandmothers taught him to create in their family kitchen. Using traditional techniques and regional ingredients Camilo puts a modern twist on classic Colombian dishes. The food is local, vibrant and visually appealing.

Camilo and Jose host at Camilo's gastronomic production center that has a professional kitchen where you will cook together.

What to expect

Please note menu might vary. If there are particular dishes you are interested in trying, please include your request in the booking form.

In-home meal: (2-20 guests) Enjoy a meal with Camilo and Jose at the culinary production center. Camilo shops daily at the local market to ensure that they use the freshest ingredients at the peak of ripeness. Your meal will start with a Colombian appetizer, followed by a main course and conclude with a dessert. The menu might include dishes such as mote (typical sweet potato and cheese soup), fried costeño cheese, posta negra (tender stewed beef, Colombian-style), arepas (typical corn cakes) or patacones (fried plantains). However, please note that these dishes are just an idea for a menu as Camilo varies the menu every day. Your menu will be based on seasonal ingredients and includes typical dishes from different regions of Colombia, from the coastal areas to the mountainous zones and all the thermal floors that Colombia has. If you choose the optional alcohol add-on, you will try a cocktail based on Aguardiente, the typical Colombian liquor!

Please note that unlike a typical Traveling Spoon experience that takes place in a local home, this experience takes place at Camilo's food production center.

Cooking experience: (2-20 guests) Step into Juan and Camilo's professional kitchen at the production center. Camilo and Juan are intent on using the sensory experience as a way of learning in the kitchen. Be prepared to experiment with modern twists on traditional dishes that showcase the gastronomic heritage of the country. You will learn to cook two or three modern Colombian dishes, a starter, main and dessert, during your Bogotá cooking class. During your hands-on experience Camilo will teach you Colombian cooking techniques and how to use the local ingredients. Learn how a professional Colombian chef works in the kitchen and enjoy a fun and delicious experience.

Market visit: (2-20 guests) Cobadas (Centro De Abastos del norte) is a huge market located in northern Bogotá that sells everything a Colombian family uses to cook on a daily basis including meat, fish, grains and other typical ingredients. You will receive an overview of what is consumed in the city and the wide diversity of forms, aromas and colors of the agricultural richness of Colombia. Explore the market with Camilo and learn about the country’s incredible diversity of products. As you wander the market you will get to taste exotic fruits, drink a special Colombian coffee and sample local traditional food.

Notes: Occasionally either Camilo or Jose might be unavailable to host you. In that case one, of them will host you on their own.

Camilo and Jose can offer roundtrip transportation from the following neighborhoods in Bogota: Downtown, Chapinero, North and Zona T. If you would like a pick-up and drop-off, please add transportation to your booking and be sure to include where you are staying in the booking form.

Our experience with Camillo went beyond our expectations. He is such a cool and entrepreneurial young man. He/we cooked and served up the most delicious food in his commercial kitchen near the markets. Such an interesting set up. When our driver (organised by Camillo) picked us up, we were a little unsure what to expect but I can honestly say we did not stop smiling the entire time. We shopped, we cooked, we chopped, we ate, we drank, we learnt about Columbian food and culture and we had an incredible day. Huge thank you also to Jose (Camillo’s Uncle) for being a charming host and translator. Also thank you to the kitchen team who helped to make our experience so special Muchas Muchas Gracias from Suanne, Laurence and Gemma (Australia)

This was our favorite activity in Bogota! We had the best time with Juan as we toured a local market tasting all types of fruits, then had a coffee tasting and then went to cook our dinner together! Juan is an excellent chef who did a lot of the prep work for us and let us just do the fun stuff! We helped make arepas, a shaved coconut desert, fish tamales, and more! We then got to sit and enjoy our 7 course meal as Juan plated and served us with delicious cocktails. 10/10 would recommend to couples or groups of friends looking for a cool, intimate, local experience.

My friends and I wanted to immerse ourselves in Colombian cuisine and I asked to learn how to make arepas. Little did I know, we were in for a whole arepa themed menu. During the market tour, we visited the nearby market and tried local fruits and jumpstarted our arepa journey with a few tastings at the market. Chef Juan had the cooking class planned out really well and each of us took on a different arepa dish. The kitchen was a perfect size for our group of 6, Chef Juan, Jose, and two other cooks. After we each cooked our arepas, we sat down to drinks while the chefs finished the dishes and we were served a gorgeous meal. Every single dish was absolutely amazing. I thought it was also very well organized as the whole experience went smoothly. We had a blast cooking with Chef Juan!
