Ramses
Ramses is a former restaurant owner and seasoned private chef with over 20 years of cooking experience, including five years specializing in fine dining as a private chef. Trained in French cuisine and originally from Mexico, he has worked with James Beard Award–recognized chefs and is a member of the Disciples d’Escoffier. Now based in Alicante while traveling the world, Ramses cooks across Mediterranean, Mexican, and global cuisines, believing that food is one of the most meaningful ways to show care for others. He loves sharing the flavors and traditions of Valencian cuisine with guests in Alicante.

In this interactive Alicante cooking class, you will prepare a three course tapas style Mexican inspired meal from scratch, learning professional tips and culinary techniques along the way.
Your experience may begin with a fresh ceviche made with local Spanish fish, followed by seasonal vegetables baked in a cornucopia style puff pastry, and pork belly with roasted leeks in a rich Spanish Romanesco sauce. The class ends with a homemade dessert such as a classic financier or chocolate cake.
Chef Ramses customizes each cooking class based on your preferences, what you are celebrating, and any dietary restrictions, making this experience suitable for all skill levels. Originally from Mexico City, he often teaches in a tapas style, sharing traditional Mexican flavors alongside Mediterranean influences. Menus highlight fresh ocean catches, seasonal market produce, regional butcher selections, and wines from the nearby Ruta del Vino, offering an authentic farm-and-sea-to-table experience. Your experience lasts about 3 hours.

Begin your experience with a guided visit to the local market, just a short four minute walk away, where you’ll discover the rhythm of daily life through food. Depending on the day, witness the lively afternoon fish auction starting at 4:00 pm or explore the year round farmers market held every Wednesday and Sunday, featuring seasonal fruits, vegetables, and regional specialties.
As you stroll through the market together, your host will introduce you to favorite local vendors while selecting fresh ingredients that you will later prepare and cook during your culinary experience. This immersive market tour offers a deeper connection to local food traditions, seasonal produce, and the community behind each dish.
