Cinzia is a kind and gentle host who first learned to cook watching her mother and grandmother cook in the kitchen. She went on to study professionally at a cooking and pastry school in Italy. Cooking to Cinzia is love and life and aspires to offer the best Italian online cooking class. To feed people is to give love, energy and life to people. She transfers her energy into the ingredients of the food she prepares. She enjoys sharing her passion for her ingredients and traditions and leaving a piece of her culture with travelers, through her online Italian cooking lessons. A mother of three, Cinzia works in analytics during the day to sustain her family, and fuels her passion for food by cooking in the evening.   • Ingredients for your Italian online cooking class:
  • 300 g (2 1⁄4 cups) flour (or 150 g regular flour + 150 g semolina flour)
  • 3 eggs
  • 3 tbsp olive oil
  • 3/4 cup (100 g) breadcrumbs
  • 2 medium tomatoes OR one 14 oz can of tomatoes (any kind)
  • 1-2 cloves of garlic, finely chopped (take out the green center)
  • 1 1⁄2 tablespoons extra virgin olive oil
  • 3 tbsp grated parmesan cheese
  • Salt and pepper
  • Pinch of nutmeg
  • 1⁄4 cup fresh basil, thinly sliced (for garnish)
  • 1 cup (250 g) heavy cream
  • 1/4 cup (60 g) whole milk
  • 1 envelope gelatin (you may use less than a full packet)
  • 2 tbsp water
  • 3/8 cup (80 g) icing sugar (also called powdered or confectioners sugar)
  • Handful of fresh berries or chocolate bar to melt (optional topping)

"Cinzia was a great teacher. She made it easy to follow the directions and taught us about regional cooking styles as we were making the recipes. She used Zoom well, showing us the steps in the process and giving us tips on how to do things. The recipe gave measurements in grams, but we didn't have a scale so she was able to convert to cups for us. The food came out delicious, and feel like I would be able to follow the recipes again on my own in the future. It was also fun to be able to share the experience with my son who lives in California - we don't often get the chance to do things together like this."

"I made a successful bid on a private pasta cooking class for a charity auction, and my "plus one" (our teenager) and I were paired with Cinzia for the experience. She was a lovely chef and host for us. She was patient with our questions and our inept "inexperienced cook" capabilities, and while our fresh pasta was far from the best pasta we've ever had, the thrill of eating our own homemade ravioli (and panna cotta too) was pretty amazing! Not to mention, we were in the NYC area and she was in Florence, and despite that the Zoom cooking and logistics lesson worked surprisingly well. We both really enjoyed and would do it again."

"Our class with Cinzia was such a treat! Our friends had gifted us this online cooking class because we were supposed to be in Italy & had planned to take a cooking class in Florence. This was the next best thing! Cinzia was a great instructor, so friendly, and a pleasure to cook with! It was incredible how she made us feel at home in her kitchen, even though we were a world away. We weren't sure if our dishes would turn out because of the training through a screen, but Cinzia did an amazing job of coaching us and showing us how things should look before moving on to the next step. The gnocchi & mushroom dish was delicious! We had so much leftover gnocchi for the rest of the weekend & we loved every bite. And oh my gosh, the tiramisu!! It was sinfully delicious! We had also made twice the size so we were able to share it with our friends, and they were very impressed! We can't wait to travel to Italy soon and take a cooking class with Cinzia in real life! "We were supposed to go to Italy for 2 weeks in June so instead we took a cooking class with Cinzia. We absolutely loved it! We have 2 teen daughters and this class was a perfect family activity during quarantine. We met her daughter as well. She was flexible asking what sauce we would like for dessert. Chocolate vs Berry and we went for the berry one. As we were making the Panna Cotta, she recommended adding different flavors so we added cinnamon. Then we made a delicious mushroom sauce while the potatoes were cooling for the gnocchi. We then began the gnocchi process of mixing potatoes with flour, then forming a ball and cutting the gnocchi. The gnocchi boiled quickly and we had a delicious traditional Italian dinner at home. She told us about the cooking classes she offers with a trip to the market that we can and will take when we can finally visit her in Florence. We think it was fate that brought us to Cinzia and we are looking forward to booking another virtual class with her soon until we can visit her live in Florence. "
