Meet Robert

Robert has been cooking professionally for over 30+ years. For almost three decades, food has been the center of his life. He has worked as a food critic and editor, restaurant designer, hotel operator, and Chef. He launched his first restaurant pop-up as a high school junior and began traveling the world in search of flavor by 19. As a food writer, he was nominated as World’s Best Food Journalist and won numerous global accolades as a correspondent for Travel+Leisure, Gourmet, Boston Globe, and Slow Food. As a Doctoral scholar, he has lectured at food conferences and universities on four continents. As a culinary consultant, he has worked with generational talents like Michelin 3-star chef Jean-Georges Vongerichten, Sydney’s top toque Neil Perry, and Top Chef winner Harold Dieterle. As a culinary and operations director, he has developed 50+ restaurants and luxury hotels in the US, UK, and Asia, including some of the world’s top brands (W Bangkok and Seoul, Fullerton Bay Singapore, Corinthia UK). He believes that food has a unique ability to connect people, transcend culture, and create lasting memories. What to expect

In-home meal: (1-20 guests) Located in an 1800's loft and private kitchen in the historic Old Port of Montreal, Chef Robert hosts this Montreal supper club devoted to exploring the global flavors and culinary communities of this delicious city and province. This 2-hour, unique, small-group dining experience is a 5-course tasting menu of dishes inspired by the tastes of Montreal's emerging immigrant cultures - a market mix of Asian, Caribbean, Italian, Portuguese, or Persian - created by a Michelin star-trained Chef. Unlike restaurants, the Chef cooks every single dish personally and narrates the origins and inspiration of each course. An emphasis is placed on gastronomic storytelling, Canadian foodways, local community and culinary roots. Your menu varies based on the season. If you choose the optional alcohol add-on, Robert offers a matching flight of tasting portions of 5 unique wines and craft ferments or, for the non-drinker, an original flight of craft mocktails and single-garden and vintage teas from collector-level producers from 1990’s and 200’s. The wines have been curated by a trained sommelier.

1. Please note that unlike most Traveling Spoon experiences this is a shared, small-group experience - this experience is NOT private.
2. For groups larger than 10, Robert brings in additional wait staff and applies a service surcharge.
3. Robert has two hypoallergenic cats; they can be placed in a different room during your experience.
4. Children above the age of 4 will be charged the price of an adult. The website defaults to charging 50% but since our host prices children and adults the same, please add children as adults while booking this experience.

It IS really an experience to have if you are ready to discover the real food experience: cooking, sauces, Michelin stars, asian cooking... and: if you REALLY want to eat great food made by a connoisseur, that's the place (local food, great ecologic values...). I highly recommend booking a private dinner with Michelin trained Chef Rob. We joined his supper club of 12 people, located on a back street behind a paint peeling blue steel door with a security lock, up 3 flights of seedy service entrance stairs where you think you're being led to have your kidneys removed - it adds to the air of adventure of rooting out some of the best food in Montreal. "Knock loudly when you arrive." You hear the laughter behind an apartment door, aromas wafting into the hallway, and know you've reached the right spot- opening to a warm and welcoming scene of chatter and smiling faces of new friends. Chef Robs incredible wealth of knowledge about food, wine, and culture weaves between the 5 courses effortlessly. You're in his kitchen, at his table set for 12 and conversing with 10 strangers. Casual and comfortable, shoes off and coats tossed on the couch, yet the food remarkable and plated meticulously, his 30 years of travel and training highlighted as you travel with him through food and wine to Thailand, Persian, Korea and other areas of the world where he has spent months or years at a time immersing himself with street cooks. Truly an experience not to be missed.

Rob shared so many great techniques in much more depth than any other cooking class we have had. I feel like we can really take these things back to our own kitchen. Spectacular flavor combinations that can be easily modified. Knife skills, mixing skills, proper plating.

Chef Rob was outstanding! He covered some intermediate to advanced skills for prep and plating. He discussed the finer details of 'high-end' restaurants vs other restaurants for noise level, efficiency of movement, pre-planning for meals, etc. Everything was valuable!! And, Chef Rob made it FUN!!! We then enjoyed a wonderful meal (that we had helped prepare). Chef Rob offers paired wine and cider with each course (for an additional fee). Finally, we also met two other couples who were a pleasure to meet and spend time with. All in all, a wonderful experience!!

Robert is a great chef and teacher. He has an encyclopedic knowledge of food, and a great deal of love for Montreal’s ethnic diversity and foodways. The fusion creations we created in homage to La Cité’s immigrant populations were delicious and original. We learned not just about ingredients, but also about techniques and equipment. The selection of wines, beers, and ciders served with the meal were wonderful, too. Highly recommended.

Traveling Spoon connects you with meaningful culinary experiences, from private cooking lessons to homecooked meals in people's homes. Enjoy an immersive cultural experience that gives you a glimpse into the local way of life.

FAQ

    You can cancel your reservation up until 48 hours before your experience for a full refund minus a 4% processing fee. Experiences within 48 hours are not refundable.

    If you have a question for your host, you can include a note in the field "Write a note to your host" during the booking process. Once your booking is confirmed, you will be emailed your host's direct contact information and you will also be able to message the host through your profile. You can always cancel your booking and receive a full refund 48 hours or more before your experience. If you have other questions you can also email us at reservations@travelingspoon.com.

    Most of our hosts are able to accommodate dietary restrictions and allergies, including vegetarian and gluten free options. For vegetarian travelers, we have an icon on each host profile to indicate whether that host can also offer a fully vegetarian menu. There is a section in the booking form to note any allergies or dietary restrictions which will be sent directly to your host.

    Some hosts offer alcohol as an optional add-on for travelers who are of legal drinking age. Pricing for alcohol is visible on the host profile page and includes one to two glasses of wine, beer or local alcohol.

    Have a flight or other tour planned and can't make the timing provided? If the timing listed on the host's profile doesn't work for you, our hosts can often accommodate timing changes. Because all of our experiences are private our hosts are happy to tailor experiences to meet your travel needs. Simply note your request in the booking process.

    Your card will not be charged until your host accepts your booking. Typically hosts respond to bookings within 72 hours. In the event your host is unavailable on your selected date and your host rejects your booking your credit card will not be charged.

    Your host's detailed contact information, including their phone number, address, and direction notes, will all be provided immediately upon successful confirmation of your experience (after your hosts accepts your booking and your credit card is successfully processed). This information will be emailed to you to the email address you used to sign up, and will also be visible on your Traveling Spoon profile.

    All prices are noted per person prices unless otherwise specified. Transportation is typically charged on a per car basis. Children aged 5-11 are 50% off, and infants aged 0-4 are free. Hosts set their own prices and Traveling Spoon marks up the experiences; on average hosts receive over 70% of the price paid by the traveler.

    100% of Traveling Spoon experiences are private! Just you and your host and host's family.

    Hosts typically respond to booking inquiries within 72 hours. If for some reason you have not heard from your host or if you have any questions you can always contact us at reservations@travelingspoon.com.

    Your safety and security are our top priority. To ensure this, Traveling Spoon personally vets 100% of all hosts, including an in-person host visit, to ensure each host and experience meets our strict quality requirements.

    Some hosts offer transportation as an optional add-on for travelers. Typically this is round trip transportation with pick up and drop off at your hotel. Pricing is quoted per car. Specific instructions for transportation will be provided in your confirmation details when your booking is confirmed.

    Many of our hosts accommodate solo travelers. You can see if a host accepts solo travelers by looking at the traveler range found next to the experience descriptions on the host profile (indicated by the numbers in parentheses next to "In-home meal", "Cooking experience" and "Market visit").

    Most of our Traveling Spoon experiences are incredibly family friendly and can accommodate infants and children. If a host is unable to accommodate children that will be noted in the "Notes" section of their profile. Our child pricing policy is children aged 5-11 are 50% off, and infants aged 0-4 are free.
