Meet Edwina

Chef Edwina left her native Australia for Spain in 2000 and began cooking Moroccan dishes soon after, having being invited to a Moroccan wedding and returning home with tagines and spices. She became so passionate about the flavors of Moroccan cuisine that in 2002 she relocated to Marrakech and bought a riad close to a wonderful market and surrounded by artisans' shops. Over the next four years she completed a renovation of the riad, turning her home into a culinary destination.

Edwina started her cooking school in celebration of her son, the acclaimed Melbourne chef Ed Golombek, who passed away after battling cancer. Edwina cooks and teaches Moroccan-fusion dishes.

What to expect

In-home meal: (2-24 guests) Edwina lives in a beautiful riad (a traditional Moroccan-style home built around an open courtyard) in the Medina (walled city). Her home is beautifully restored and Edwina offers a variety of cooking classes, tasting menus and full culinary holidays.

For the degustation dinner, you can expect a seasonal fusion menu inspired by the morning’s market and if you choose the mystery menu, also seasonal but with a twist in regards to the ingredients and methodology! In the warmer months, dinner is served on the terrace and during the cooler months, around the downstairs courtyard fire.

Market visit: (1-6 guests) After a warm welcome by Edwina, you will start your guided Marrakech market tour by discussing your menu over coffee. Followed by compiling your shopping list in English (and then Arabic!) of the ingredients for your eight chosen dishes. Then walk together a few minutes to the souk (local market), where you will shop in your new language. Here you will be surrounded by local, seasonal produce, and you will choose all the ingredients on your shopping list for your Marrakech cooking class. Return together to the riad where you will begin preparing your feast!

Your Moroccan cooking class in Marrakech with Edwina is hands-on and will include eight dishes based on your dietary preferences. You will begin with learning the Moroccan art of tea making and then begin preparation for your eight chosen dishes. Menu choices are seasonal and will depend on availability at the market. This is a fun, interactive class of chopping, slicing, juicing, stirring and making chermoulas (marinades) for your chosen dishes. After cooking, your meal will be served in the central courtyard, where the dining table is set under the canopy, amid lush bougainvillea's.

After lunch, visit a spice trader, where the locals shop, to buy spices to take home. Recipes are emailed, at the conclusion of the class.

Notes: Cooking classes are unavailable on Fridays (meals, however, are available 7 days a week). Since the riad is also used for cooking vacations with stay, you might see other guests while you are there.

I had the chance to enjoy a full experience with Edwina and Hansa - market visit, cooking class and meal. After a warm welcome by Edwina, we started discussing the menu. She was flexible, suggesting the dishes but allowing me to decide or adjust the meal. We then started preparing the market list in English and Arabic so that I could participate in the shopping process. That was a plus. Spending the day with Edwina is also a great opportunity to discover her beautiful riad, a peaceful haven on a quiet side street of the busy Marrakech Medina. I had a great time and learned a lot! I had got up very early that morning and driven a long way, so the riad was the perfect place to relax while spending a wonderful time cooking.

I love Edwina, which is not easy for me to admit. She's vivacious, witty, and an amazing teacher. The way she interacts with you to translate cooking techniques makes it so easy to learn. There were moments when she had us taste the food and decide what flavor we thought was missing. It was a complete hands-on experience that allowed us to use all of our senses. Everyone who loves food, but is afraid to enter the kitchen, needs to learn with Edwina. Actually, everyone should just cook with Edwina.

FAQ

    You can cancel your reservation up until 48 hours before your experience for a full refund minus a 4% processing fee. Experiences within 48 hours are not refundable.

    If you have a question for your host, you can include a note in the field "Write a note to your host" during the booking process. Once your booking is confirmed, you will be emailed your host's direct contact information and you will also be able to message the host through your profile. You can always cancel your booking and receive a full refund 48 hours or more before your experience. If you have other questions you can also email us at reservations@travelingspoon.com.

    Most of our hosts are able to accommodate dietary restrictions and allergies, including vegetarian and gluten free options. For vegetarian travelers, we have an icon on each host profile to indicate whether that host can also offer a fully vegetarian menu. There is a section in the booking form to note any allergies or dietary restrictions which will be sent directly to your host.

    Some hosts offer alcohol as an optional add-on for travelers who are of legal drinking age. Pricing for alcohol is visible on the host profile page and includes one to two glasses of wine, beer or local alcohol.

    Have a flight or other tour planned and can't make the timing provided? If the timing listed on the host's profile doesn't work for you, our hosts can often accommodate timing changes. Because all of our experiences are private our hosts are happy to tailor experiences to meet your travel needs. Simply note your request in the booking process.

    Your card will not be charged until your host accepts your booking. Typically hosts respond to bookings within 72 hours. In the event your host is unavailable on your selected date and your host rejects your booking your credit card will not be charged.

    Your host's detailed contact information, including their phone number, address, and direction notes, will all be provided immediately upon successful confirmation of your experience (after your hosts accepts your booking and your credit card is successfully processed). This information will be emailed to you to the email address you used to sign up, and will also be visible on your Traveling Spoon profile.

    All prices are noted per person prices unless otherwise specified. Transportation is typically charged on a per car basis. Children aged 5-11 are 50% off, and infants aged 0-4 are free. Hosts set their own prices and Traveling Spoon marks up the experiences; on average hosts receive over 70% of the price paid by the traveler.

    Hosts typically respond to booking inquiries within 72 hours. If for some reason you have not heard from your host or if you have any questions you can always contact us at reservations@travelingspoon.com.

    Your safety and security are our top priority. To ensure this, Traveling Spoon personally vets 100% of all hosts, including an in-person host visit, to ensure each host and experience meets our strict quality requirements.

    Some hosts offer transportation as an optional add-on for travelers. Typically this is round trip transportation with pick up and drop off at your hotel. Pricing is quoted per car. Specific instructions for transportation will be provided in your confirmation details when your booking is confirmed.

    Many of our hosts accommodate solo travelers. You can see if a host accepts solo travelers by looking at the traveler range found next to the experience descriptions on the host profile (indicated by the numbers in parentheses next to "In-home meal", "Cooking experience" and "Market visit").

    Most of our Traveling Spoon experiences are incredibly family friendly and can accommodate infants and children. If a host is unable to accommodate children that will be noted in the "Notes" section of their profile. Our child pricing policy is children aged 5-11 are 50% off, and infants aged 0-4 are free.
