Your host Midori
Midori has been cooking and researching Japanese and South East Asian cuisine for over three decades and is a wealth of knowledge on Japanese cuisine. She grew up in Akashi city where she learned traditional Japanese cooking from her grandmother. In 1995, Midori decided she wanted to share her cooking skills with others and started cooking classes in Kyoto. She then ran cooking classes in Singapore before returning back to her beloved Kyoto. She opened a lovely cooking studio close to the magical Gion district which is where she offered her classes until before the pandemic. Currently she offer classes from her cozy home. Here she teaches Japanese locals about South East Asian food, and international travelers about homemade Japanese food. Midori is excited to share her culture through food and offer the best online Japanese cooking class experience.

  • Ingredients for Japanese online cooking class:
  • 2 ripe bananas
  • 1 orange
  • 1/2 apple
  • 2 slices of pineapple (fresh or canned)
  • 1 1/4 cup (300ml) milk of your choice
  • Ice cubes
  • 1 cup (200ml) water
  • Sugar as per taste
  • 1 tsp katsuo instant dashi powder (bonito soup stock powder) or chicken soup powder
  • 3/4 cup water
  • 5 oz (160g) all-purpose flour
  • 1-2 (120g) small yam or potato (grated)
  • 12 oz (300~350g) cabbage (chopped)
  • 2 green onions (chopped)
  • 10 oz (300g) pork belly slice or bacon or seafood
  • 2 eggs
  • 3 tbsp tenkasu by otafuku (tempura crumbs)
  • 2 tsp Okonomiyaki sauce by otafuku (or you can make the sauce by mixing: tomato sauce + Worcester sauce or BBQ sauce)
  • 2 tsp kewpie Japanese mayonnaise
  • 1 tbsp oil (any kind you prefer)
  • Topping: 0.5 oz otafuku aonori flakes (crushed dry green seaweed), 0.5 oz marutomo bonito flakes (dried tuna flakes)
  • Salt as per taste
