1 lb. chicken, cleaned and cut
3 tbsp oil
1 tsp fennel seeds
1/2 cinnamon stick
2 onions, finely chopped
9 large garlic cloves, finely chopped
A sprig of curry leaves
2 tomatoes, finely chopped
1 1/2 tsp chili powder
1 1/2 tsp coriander powder
1/2 tsp turmeric powder
1 tsp cumin seeds
1 tsp black peppercorn
3 cups water
1 bunch coriander leaves, finely chopped

The Chettinad region of Tamil Nadu is famous for its focus on aromatic flavors and use of freshly ground spices in predominately non-vegetarian dishes. Your menu for the online class will include dishes such as Chettinad chicken masala, and koli rasam, a peppery chicken soup.
