Your host Manuela
Manuela is passionate about sharing the culinary traditions of Morocco. Originally from Italy, Manuela moved to Morocco with her family and bought a beautiful riad (a traditional Moroccan-style home built around an open courtyard) in an old Jewish neighborhood. Aicha is the chef at the riad and hosts together with Manuela. Aicha comes from a traditional Moroccan family and learned to cook from her mother and grandmother from scratch using only fresh and local ingredients.

  • 2 lbs chicken or zucchini, potatoes, carrots, tomatoes and green peas
  • 2 preserved lemons
  • 3/4 cup pitted olives
  • 2 onions, chopped
  • 3 cloves garlic, chopped
  • 1/2 tbsp ground coriander
  • 1/2 tsp ground ginger (or freshly grated ginger)
  • 1/2 tsp black pepper
  • 1/2 tsp ground turmeric
  • 4 tbsp extra virgin olive oil
  • 1/2 cup water
  • 4 cups (1 l) regular milk or cashew nut milk
  • 5 tbsp cornstarch
  • 5 tbsp sugar
  • 1 tbsp orange blossom essence or rose water
  • 2 tbsp almonds, chopped
  • 1 tbsp raisins
