Your host Shira
Shira is a Jerusalem-based baker, gastronome, travel lover, junior photographer and an alumna of the University of Gastronomic Sciences in Italy, where she obtained a master of gastronomy and food cultures. Born to an American mother and Israeli father, Shira's background made the relationship between food, culture and heritage evident (and enjoyed!) in her house: kubbeh (Iraqi meat dumpling) was as celebrated as bagel with cream cheese and lox! Shira’s father is the family's chief baker, and he passed the baking genes on to her. Bread, cakes, cookies and pies of all kinds are among Shira’s favorite things to bake and serve (her flatmates are always very happy!). Food has always been Shira’s favorite way to explore and experience new places and cultures and she is now excited to share her local food wisdom and cooking secrets with travelers from all around the world!

  • 1 cup (240 grams) raw tahini
  • 1 cup (200 grams) granulated sugar
  • 1 cup (200 grams) butter, at room temperature
  • 1 teaspoon vanilla extract
  • 3 cups minus 2 tablespoons (400 grams) all-purpose flour
  • 2 teaspoons (10 grams) baking powder
  • 2-3 tablespoons honey (optional)
  • Toppings: whole almonds or other nuts of choice (chocolate chips and date bits are also an option!)
  • 1 cup (240 ml) water
  • 6-7 tablespoons (60-70 grams) corn or potato starch
  • 1 liter coconut cream
  • 1/2 cup (100 grams) granulated sugar
  • 1/2~ teaspoon orange blossom or rose water. If you don't have them, grab a bunch of fresh mint! And if mint isn't handy, try cinnamon nutmeg, or even 1/2 teaspoon vanilla
  • Toppings: smooth pomegranate or cherry syrup/jam, crushed pistachios
  • Additional topping options: other choice of syrup or jam, date molasses, nuts of choice, coconut flakes, crumbled halva, or even chocolate syrup if you feel like breaking the rules !
