In her later years her grandmother couldn't see well so she cooked by touch, measuring the spices and ingredients with her hands and checking doneness by feel. Payal's passion for handmade home food grew as she started a family of her own and now she shares her love of seasonal cooking with both her young sons and guests at her homestay.

"Great to learn how to make a dish like this (delicious, rich) while keeping it vegetarian (and it's easy to make it vegan). The vegetable pulao is also a keeper. Payal did a great job of constantly checking in on my dishes to make sure everything was on track."
