Your host Kaushik
Kaushik’s job in the Indian Railways gave him the opportunity to travel often and that is when he developed his passion for food, cooking and meeting new people. He grew up in a typical Tamil Brahmin family and then married into a South Indian Madhwa Brahmin family, providing an ideal blend of cuisine from both cultures. Kaushik learned to cook from his mother and his wife. As an avid traveler and home-cook, Kaushik is excited to share his family recipes with travelers.

  • Ready dosa batter (available in most Indian stores) or make your own: 2 cups raw rice, 1/4 cup urad daal (split and dehusked black gram lentil), 1 tsp fenugreek seed, salt
  • 2 medium sized potatoes, boiled and mashed
  • 2 onions, chop lengthwise
  • 1 tomato, cut in cubes
  • 2 tbsp green peas
  • 1-inch piece ginger, grated
  • 2 green chilies, slit into pieces
  • 2 tbsp oil
  • For seasoning: 2 tsp mustard seeds, 2 tsp urad daal (split and dehusked black gram lentil), 2 tsp turmeric powder, 1 tsp cumin seeds, a pinch of hing (asafetida), a few curry leaves
  • 2 tbsp coriander leaves, for garnish
  • 1 cup shredded coconut (available in Indian Stores in most of the countries)
  • ¼ cup roasted gram (Bengal gram) or peanuts
  • 2-3 green chilies
  • Salt to taste
