Your host Khmisa
Khmisa, has been a chef for 40 years, she specializes in Morrocan cuisine and pastry. She has worked for several renowned hotels in the cities of Rabat and Marrakech. Her daughter, Kawtar, graduated with a bachelor degree in hospitality and tourism. Cooking, creating recipes, learning about new flavors combinations and feeding friends and family, are a few things Khmisa and Kawtar enjoy together. And now they are excited to share their passion and secrets of Moroccan cuisine and culture with travelers from around the world.

  • 1/2 onion, finely chopped,
  • 1 large sweet green pepper such as bell peppers (green, red, yellow)
  • 2 tbsp olive oil
  • 2 large tomatoes
  • 3 cloves of garlic. finely chopped
  • 2 eggs
  • 2 tbsp parsley and coriander, chopped finely
  • 1 tsp cumin
  • 1 tsp sweet paprika
  • Pinch of black pepper
  • Salt to taste
  • 1 ½ cup extra fine semolina
  • 1 tsp caster sugar
  • 1 tsp dry yeast
  • ½ tsp salt
  • 2 cup warm water
  • 1 fresh mint sprig, cut in half so they can fit in the teapot and more for garnish
  • 2 tsp green tea
  • 2 cups boiling water
  • 3 tsp caster sugar (optional)
