Shilpa is a food consultant and runs a takeaway service from home called Gourmet Greens and Beans. She lives in the heart of Mumbai city, with her husband Deepak, son Sharang and daughter Diya, who already dreams of becoming a pastry chef just like her mother. Shilpa is originally from Ludhiana in the north of India and calls herself a hard-core Punjabi who loves to eat and make merry. She is excited to tell you all about the food, culture and lifestyle of the people living in different parts of Punjab. In your online cooking class learn to make palak paneer (spinach and Indian cheese curry), laccha paratha (layered flatbread) and aloo ki sabzi (spiced potatoes).

  • 1 large bunch of spinach, pureed
  • 3/4 cup paneer or tofu cubes
  • 1-2 green chilies, seeded and chopped
  • 1/2 tsp cumin seeds
  • 1 large onion, finely chopped
  • 1 tsp ginger garlic paste
  • 1 tbsp Greek yogurt or tomato purée
  • 1/2 teaspoon kasuri methi (dry fenugreek leaves, this is optional)
  • 2 tbsp heavy cream or cashew cream or full fat milk cream
  • 2 tablespoons oil + 1 tablespoon butter
  • 1 cup whole wheat flour + some flour for dusting
  • 1/4 cup warm water
  • 1 tbsp oil or ghee
  • 3 medium sized potatoes, boiled, peeled and cubed
  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp turmeric
  • 1/2 tsp red chili powder
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 green chili, chopped
  • 1 tsp sugar
  • 1 tsp lime juice
  • 5-10 curry leaves
  • 2 tbsp coriander leaves, chopped, for garnish
  • Salt as per taste

"Delicious food with recipes and a knowledgeable teacher. We've made the palak paneer and aloo ki sabzi several times now. Shilpa explained everything, was available for questions, and followed up to ensure we enjoyed our food. The only downfall was the Zoom video limit was about 45 minutes, which made everything feel faster than anticipated. I would recommend taking Shilpa's class."

"Shilpa is very nice and eager to share her skills. The class was very fast paced and I wasn’t able to keep up completely. We made three dishes in 40 minutes. Measurements for the main dish were not quite right. I appreciate that Shilpa made herself available for questions after the class."
