Your host Rochani
Rochani is originally from Nepal but is currently living and working in London. She is very passionate about cooking and has learned to cook traditional Nepali food from her mother. Cooking is therapeutic for Rochani and she is so excited to virtually teach you to make some of her favorite, comfort food. Enjoy learning to cook family recipes that have been passed down from her grandmother, who cooked for the king of Nepal. You will learn to make momos, a delicious steamed dumpling filled with meat of your choice and choyla, a spiced meat dish, traditionally made with water buffalo but that can be made with meat of your choice or mushrooms.

  • 2 cups all-purpose flour
  • 1/2 cup water
  • 1/2 lb (200 gr) ground chicken, turkey, lamb or beef (or boiled, mashed potatoes, if vegetarian)
  • 1 cup spring onions, chopped
  • 1 tbsp ginger garlic paste (made from blending together 3 cloves garlic and about 1” peeled, fresh ginger, roughly chopped)
  • 1 tsp Kashmiri red chili powder (or cayenne)
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp cinnamon powder
  • 1/2 tsp ground turmeric
  • 1 tsp salt
  • 1.5 lbs skinless chicken thighs, lamb or beef, chopped into 1” cubes (traditionally made from water buffalo meat, you can also use mushrooms as a substitute)
  • 2 tsp Sichuan pepper
  • 8 garlic cloves, chopped
  • 4 large tomatoes
  • 2 red chilies, slit
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 1 cup cilantro leaves, finely chopped
  • 2 tsp red chili powder (cayenne)
  • 1/4 cup oil (mustard or other)
  • 1 tsp fenugreek seeds
  • 1 tsp ground turmeric
  • 1 lemon
  • Salt to taste

"Our cooking lesson with Rochani was a thoroughly enjoyable experience. We were provided with ingredient lists and vegetarian substitution suggestions in advance, as well as necessary cooking implements. Rochani was very welcoming and communicates fluently in English. She started the session on time and her friendly style comes through even on Zoom. She instructed four of us, in three separate locations and offered suggestions to vary the meal prep based on what we had available. Rochani's location in London, UK allowed us to experience Nepalese cooking with a very reasonable 5 hour time difference from eastern Canada."
