Filipe is a chef based in Porto who has dedicated himself to the culinary arts since 2004. A former photographer, he went on to open Porto’s first sourdough bakery in 2013. Together with his wife Andrea, a communication designer, he welcomes travelers into their home for intimate dining experiences that celebrate Portuguese history, culture, and hospitality. Filipe’s cuisine blends professional culinary expertise with traditional Portuguese comfort food drawing inspiration from 16th and 17th century manuscripts. Using seasonal, locally sourced ingredients, he revives forgotten techniques and recipes to create soulful, authentic meals meant to be shared around the family table.

Hosted at their family home, this storytelling-driven dining experience explores Portugal’s rich culinary heritage, from its Islamic influences and the Age of Discoveries to the revival of royal recipes from the 16th and 17th centuries. Through food, history, and conversation, you will gain a deeper understanding of Portuguese culture and culinary traditions.
Your meal begins with alheira, often known as the "secret Jewish sausage," created in the late 15th century during the Portuguese inquisition. Next comes pataniscas de bacalhau (traditional codfish fritters), a beloved comfort food originating from the historic Estremadura region near Lisbon. The main courses celebrate both traditional Portuguese cuisine and historical culinary discoveries. You'll enjoy arroz carolino com favas e chouriço (carolino rice with broad beans and chouriço), followed by petingas em escabeche (marinated baby sardines) and boldroegas da Infanta Dona Maria, a 16th century royal meatball recipe preserved in the oldest known Portuguese cookbook. Learn to cook a traditional Portuguese appetizer or dessert alongside a main course in your 2-hour hands-on Porto cooking class. More than simply learning how to cook Portuguese food, you will discover the fascinating history behind each recipe - from Portugal's Golden Age of Discoveries and its rich Al-Andalus (Moorish) heritage to ingenious culinary traditions developed during the 15th century Inquisition and the closely guarded secrets of Portuguese convent kitchens.
Depending on the season and menu, you may learn to prepare tibórnia de lagar on pão sovado, a densely kneaded bread designed to last for weeks in the mountains, or pão de ló de ovar, a sponge cake created centuries ago by Catholic nuns in Portuguese convents and golden age fish in vinha d'alhos & escabeche infusion, inspired by the preservation methods used by Portuguese sailors during the Age of Discoveries, when vinegar, garlic, and spices helped sustain crews on long ocean voyages aboard the caravels.
