Jose is a culinary school graduate and passionate home cook who loves introducing travelers to Chilean culture through food. He earned his bachelor’s degree in culinary arts in France and later lived in Australia, where he worked as a sous chef at an Italian restaurant. Today, he enjoys sharing his professional cooking knowledge in a relaxed, approachable way and teaching guests how to prepare the traditional Chilean dishes he grew up enjoying. Jose hosts alongside his cousin, Juan Esteban, at Juan’s family home in Santiago, where he lives with his family and two cats. The cats are kept in a separate room during the experience. For Jose, food is one of the best ways to discover a country because every dish carries stories, traditions and a sense of place. He especially enjoys preparing Chilean favorites such as empanadas, pastel de choclo and pebre, preserving their traditional flavors while making them fun and accessible for first-time cooks. More than simply serving guests a meal, Jose wants travelers to experience what it feels like to cook with local friends in Santiago—preparing food together, learning about Chilean ingredients and traditions, and sharing stories and conversation around the table.

Cooking experience: (3-6 guests) Available on weekends, join Jose and his family for a small-group Chilean cooking class and Pisco Sour class in a local home in Santiago. This intimate, 3-hour culinary experience offers a hands-on introduction to traditional Chilean food, drinks and culture while giving you the opportunity to connect with locals around the table. Begin your experience by learning how to make Chile’s iconic Pisco Sour with Jose’s wife, Fernanda. Then roll up your sleeves and join Jose in the kitchen to prepare a traditional, home-cooked Chilean meal. A culinary school graduate with professional restaurant experience, Jose makes cooking approachable and fun while sharing his knowledge of local ingredients, recipes and Chilean food traditions. Depending on the menu, you might prepare ensalada chilena, a refreshing tomato and onion salad, followed by homemade empanadas filled with seasoned ground beef, onions, olives and egg, or pastel de choclo, Chile’s beloved corn casserole traditionally made with beef and chicken. Finish with leche asada, a classic Chilean baked custard similar to flan. Once the cooking is complete, sit down together to enjoy the meal you have prepared and spend time talking, eating and learning more about everyday life in Chile. Rather than a typical Santiago cooking class, this is a personal opportunity to experience Chilean food and culture in a local home and feel, for a few hours, as though you are cooking with friends in Santiago. This experience is available on weekends only. Vegetarian options are available with advance notice. Vegan, gluten-free and lactose-free diets cannot be accommodated. Guests are welcome to bring their own wine or beer to enjoy with the meal.
Notes: Please note that two cats live in the home but are placed in a separate room during your experience. The experience takes place in a wheelchair-accessible apartment.
