Meet Chamsi

Chamsi says that coming to Morocco can be overwhelming – in a good way! The sounds, the smells, and the local culture can be a mystery to visitors and meeting Chamsi is the perfect way to dig beneath the surface and connect with local life in a more personal and meaningful way. Chamsi is an Algerian-Canadian, married to a Moroccan. She and her husband have lived in Casablanca for nine years and in that time she has come to love the local way of life. Of course, food has been central to her experience! She learned the ins and outs of Moroccan cooking from the best home cook she knows – her mother in law, Lala Naima. They believe that true, authentic Moroccan food is best when prepared at home and she is excited to share her recipes with travelers.

Chamsi is a professional photographer and has a great sense of color and texture, which means her food is both delicious and pleasing to the eye! She lives in a beautiful, newly built home with a large kitchen that is perfect for entertaining. Chamsi has a young son who might be home during your visit.

What to expect

In-home meal: (1-20 guests) Join Chamsi and her family for an authentic Moroccan meal at their lovely home. Chamsi prepares typical home-style dishes that are seasonal and often feature Casablanca’s local seafood. You might try lamb tagine with seasonal vegetables, marinated and grilled seafood, Moroccan lemon chicken with olives, couscous, tchackchouka (roasted bell pepper salad), camel burger or zaalouk (eggplant salad) with homemade bread. You will conclude your meal with a dessert such as milk pastilla, oranges with cinnamon or Moroccan cookies.

Chamsi can prepare a wonderful vegetarian meal, meat is halal or can also buy kosher meat, so be sure to ask if you have any special dietary requests.

Cooking experience: (1-8 guests) Learn to prepare a Moroccan meal with Chamsi in her beautiful open-space kitchen. Be ready to roll up your sleeves and help prepare an authentic Moroccan meal. You’ll cook together for about an hour before sitting down to enjoy the dishes you helped prepare. Some preparation for your meal might be done in advance. Chamsi is excited to share her culture through food and offer an authentic/traditional cooking class in Casablanca. Chamsi's Moroccan cooking class is suitable for couples, family, beginners and children.

Market visit: (1-4 guests) Meet Chamsi at her home in CIL, an upscale neighborhood in Casablanca. After a refreshing drink and getting to know each other, head out to visit the local market. Chamsi will help you navigate the market, which can be overwhelming to explore on your own. She’ll show you where she buys her fresh produce, take you to the meat market (not for the faint of heart but a true, local experience!), and show you the spices that are on offer. Chamsi can help you do a bit of shopping if you’re searching for a certain ingredient. Once your market experience is complete you’ll head back to Chamsi’s home by car to get cooking!

Please note that since Friday is a prayer day, the Friday morning market might not be as active as usual and some stalls might be closed. The evening Friday market tour is not offered.

Notes: This is a family friendly experience, kids are welcome!

Please note that for experiences during Ramadan there will be some changes due to the holiday. Please note that you're not allowed to eat or drink in public. For dinner experiences booked during this time, dinner will be slightly later, whenever the sun sets. For market tour experiences, there is no tasting allowed at the market during Ramadan, so Chamsi will provide a tour and you will buy ingredients and return to her home for the remainder of the experience where you will taste them.

This experience was definitely unforgettable! I'm so happy my boyfriend and I decided to try this out. Chamsi and her family are lovely hosts with such open hearts and kind spirits. Overall, we were surprised at the eloquent lifestyle of this area in Casablanca. It's definitely different than the rural parts of Morocco we saw in the rest of our trip! Chamsi and her family showed us a real, authentic perspective and were happy to answer any questions we had about Morocco.
It's hard to say what my favorite part of the experience was, but some of the highlights were definitely spending some nice quality time with locals and getting to see all the markets. I'm also very happy to bring home some new cooking ideas!

I can not express enough the wonderful experience I had with Chamsi Dib. I did not know what to expect and she went above and beyond anything I could have imagined. From the start, Chamsi answered my call from the taxi, spoke to my taxi driver to give directions. Upon arrival she greeted me at the with a wide and welcoming smile and invitation into her home. I was served tea and locally grown treats! She sat down with me to discuss my preferences. Just the overall atmosphere in her home was friendly and inviting! I felt as if we were old friends. I immediately trusted that I was in good hands and about to have an experience of a lifetime! I was not wrong! Chamsi has an generous personality. She was easy to get along with during my time with her. You could tell that she took pride and care in teaching others about her craft and culture. After setting our lunch menu, off we went to the market to pick up the items we needed for cooking. Chamsi was careful to advise me of local cultural protocol on the streets. I tried not to act like a tourist, but I was pretty clueless and she gently guided throughout our time shopping so that I was able to be safe and have a positive experience. Hanging out in the her kitchen and cooking was like being with my close girlfriend or sister. As Chamsi taught me about the Moroccan spices, meats and vegetables, we laughed and traded cooking tips and secrets! I learned so.much about the local popular foods and traditional Morocco ways of cooking. I was able to sit and enjoy lunch with her beautiful son and husband. During lunch, I learned more about local culture. Chamsi's husband even offered to take my brother golfing. They are a warm and gracious family. I could have stayed longer but my ship was leaving. Chamsi had already arranged with my taxi driver for a pick up and her sweet husband made sure the taxi got me back to the right place and paid my fare! If you are thinking about joining Chamsi for a Morocco cooking class, don’t hesitate, she is a phenomenal woman!

Chamsi was the kindest person I’ve met in Morocco. Our experience was beyond awesome! We experienced a shopping trip to the local market in addition to a cooking class. I, unfortunately, did not have a hair straightener with me that worked. She went out of her way to accommodate me and direct me to a store where I could find one. The cooking class introduced us to using spice-not just pinching spice into the food. With in 5 minutes I truly felt “family” in her house!

We met Chamsi at her house. She was very hospitable offering us tea and Moroccan pastries. We went to the market and bought the ingredients for a chicken tagine. We returned to the house and prepped the vegetables. With Chamsi guiding us all the way. She set a very welcoming table on which we ate chicken tagine and couscous. Delicious! See the pictures. This was the best six hours of pour entire two week vacation in Portugal, Spain and Morocco! Touring the markets to buy our produce was so interesting and enjoyable. It also gave me the chance to buy some spices to take home (and they are cheap and so much better than the store bought spices). Chamsi was so knowledgeable and shared all her insights. Getting to see the community bake house behind the scenes is something tourists would never have known about or been able to do. Chamsi's home was beautiful and the cooking experience was just wonderful. She allowed us to choose the dishes we wanted to cook and gave clear instructions for the preparation process. The food was so delicious I can't come up with enough words to describe it! If you're in any doubt about doing this, just say yes. You won't regret it! This was an amazing experience. Chamis and her family were delightful. Going to the market for the ingredients and swing all the produce was worthwhile. Learn a lot about Moroccan food. What a great way to start our vacation in Morocco! We selected this cooking class based on internet reviews and am glad to pass along our experience. We were met at our hotel by Chamsi who immediately engaged us with her love and enthusiasm for all things Morocco. We had a great time shopping with her at the local market and we were encouraged to smell spices, sample local dates and nuts, watch her select all of the fresh local produce, and we selected the protein. For us it was shrimp for appetizers and chicken for the main dish. Within a few hours of cooking, she made us feel more like family than guests. The meal was “over the top” delicious and the wine was perfect. She blended all of the seasonings and it seemed like all of our tastebuds were firing at once. Five stars for this young lady and a repeat visit by us if we return to Morocco!

Chamsi was wonderful. My whole family was in the zoom. She was so nice, took us into her beautiful kitchen and taught us about delicious Moroccan cooking. Our experience cooking Moroccan Tajine with Chamsi was delightful. It felt like an physical and intimate experience as we met her family and learned a bit about the history behind Moroccan Tajine as well as her own background. Her entire family was very friendly and welcoming. The cooking process felt professional and the pace was good. We enjoyed chatting with Chamsi, sharing stories and taking photos over Zoom. The final meal was amazing!! I’m sure this isn’t our last encounter with Chamsi. We hope there will be more Moroccan meal offerings in the future with traveling spoon. It was nice to meet you Chamsi! Thank you! Great class and good pace. The food was delicious and my girlfriend and I enjoyed the cooking process very much. We will be recommending it to family, friends and co-workers . As an investor in the traveling, I naturally want more people to use the company’s services. Loved every minute! The last days of our holiday were spent in Casablanca. With the help of Chamsi we had the opportunity to learn how to shop and cook like a Moroccan!. It was a fun day spent preparing delicious food purchased that morning from the market and local bakery. The butcher prepared our lamb for the tagine and our squid and prawns were cleaned and cut to order. Chasmi welcomed us into her beautiful home to cook and eat the delicious results! It was so much fun!!! Thank you Chasmi for making it one of the highlights of our trip!

A wonderful day! I had a wonderful day with Chamsi! I Highly recommend the market tour and cooking class with her. I recently moved to Casablanca, and Chamsi made me discover the very nice Maarif Market, and meet all her favorite producers. We bought high quality products at reasonable prices. Chamsi taught me how to cook chicken tajine with olives and lemon, lamb briwates, many vegetables salads as appetizers and a delicious milk pastilla. Chamsi was very nice, fun, patient and a wonderful teacher ! She also gave me many tips, as a new comer in Casablanca ! We then shared this delicious meal with her husband. They are both amazing welcoming hosts. I really had a wonderful time, really enjoyed this cooking class, and can't wait to try the recipes again on my own !

Delightful cooking class in Casablanca. We enjoyed a delightful cooking class with Chamsi . She has a lovely open, relaxed and welcoming manner. Her set up for the day was very thorough . The market experience when buying all the food for the day, is enlightening. We did virtually all the food preparation and cooking with Chamsi guiding the way and through that learned a lot about Moroccan food and culture. The end product was delicious. Being a Saturday her husband was able to join us for lunch which created a real family setting . All in all a great way to spend a relaxing day and I can assure you won’t need dinner that evening .

One of my best Moroccan memories! My cooking lesson with Chamsi Dibs was a wonderful way to start the New Year! My schedule changed, and she was kind enough to move my cooking lesson to January 1. The lesson started with a shopping trip to the market. I was amazed by the quality and variety of the produce. Then it was on to the fresh chickens to choose one for our tagine. Finally, we stopped at an amazing bakery to buy treats for desert. I received great instructions on preparing mint tea, a beautiful Moroccan salad, and lemon chicken tajine. Chamsi's English language skills are impeccable. While at her home she also provided insights into the typical Moroccan home and lifestyle. The food we prepared was absolutely delicious. My only regret was that I was jet-lagged and lacked the appetite necessary to enjoy all that wonderful food! I will repeat this experience again if I return to Casablanca. Chamsi, thank you again for a wonderful and delicious afternoon.

This was by far my favorite activity while in Casablanca. Chamsi and her family were warm and welcoming and she is a fantastic cook and hostess. We did the traditional salads, monk fish appetizer and lamb tangine. All delicious and wonderful. Her husband, son and housekeeper were fun and engaging. The trip to the market and bakery were great. I even went back to the bakery a few days later - so delicious. it was so much fun. I cannot recommend this enough. Her family is warm and delightful and her home is lovely and welcoming. I love learning about culture through food and Chamsi's cooking class was a great and fun introduction to Morocco. We shopped for spices (oh, the spices!!), fresh vegetables, fish and lamb at a local open-air market, watched the making of flat breads and picked out sweet fried dough from a pastry shop. It was fun to watch our cooking teacher, Chamsi, interact with the shopkeepers and to see ordinary daily life. Back at her gracious home, we made lamb tagine and a lovely assortment of dishes while drinking wine, chatting and laughing. Everything was delicious and the lamb tagine was the best ever. I just replicated the recipe at home and WOW, YAY and YUM! (Don't forget to pick up spices for the great recipes she gives you as they are essential).

We had a wonderful Traveling Spoon experience with Maria! With her we had our first ever Moroccan shopping experience (a great way to get our feet wet in the ubiquitous fresh produce, spice, and whatever-you-need markets), and learned how to construct a tower of delicious vegetable tagine, mash up a peppery-tomatoey taktouka and a tomatoey-eggplantey zaalouk, carmelize a quince…and layer and fold up a beautiful almond-chicken bastella (bastila)! Maria was a gracious hostess, sharing her kitchen and her beautiful Moroccan “reception room” (as she explained, a tradition in Moroccan households) and a good instructor, explaining clearly what and how to prepare everything. I learned some very useful things from her to apply to Moroccan recipes.Our shopping, cooking, and meal with Maria was part of my friend’s special birthday trip, and Maria made it memorable indeed. We really appreciated that she included the bastila to celebrate (rather tricky to make in a single morning along with everything else). I would arrange another cooking experience with Maria, and with Traveling Spoon, in a hot minute.

My mom and I did a cooking class with Chamsi and not only was it the highlight of Casablanca, it was our favorite experience during our whole time in Morocco! Chamsi is a very knowledgeable cook, and was a lot of fun to cook with and talk to! After picking us up from our hotel, she took us to the market where she buys a lot of her groceries. It was fun shopping with a local and seeing how she picks out her produce. After that we went to her beautiful home and started cooking. Chamsi was very flexible about what we cooked and let us decide the menu (with some great suggestions from her). She let us be very involved in the whole process and talked about her cooking strategies. She also told us a lot about Moroccan culture. The meal we made was a feast! Everything was delicious. We also liked how the whole experience was leisurely and laid back. After our class, Chamsi emailed us all the recipes we made, and some extra ones from her personal recipe collection. The whole experience from beginning to end was a delight.

Maria was a fantastic host!! We learn a lot about Moroccan cooking and our food turned out great. She is a great teacher and cook. It was so nice to sit in her traditional Moroccan room to eat! It was very impressive. I would highly recommend arranging your transportation through her as it was super easy.

I loved this activity. Learned to cook a lot of new allergy-free recipes and got an insider’s view of Casablanca’s food scene. The food was delicious and dining with Chamsi’s family was probably the best part of the14-dish dinner, besides the food.

We had a very good time. We were welcomed into Chamsi's delightful home with mint tea and local patisseries. We then went to the food market and purchased the ingredients for lunch including local fish. The fish and vegetables were incredibly fresh and just walking around the market, among the very friendly vendors, was a delight. We then went back to Chamsi's home and helped her prepare dishes from local recipes, including several different vegetable salads. The final event was sitting down to a delicious lunch.I would thoroughly recommend this tour. Chamsi was a terrific host and spoke excellent English. As an added benefit the venue was wheelchair accessible.

This is an excellent way to start a Moroccan adventure. After greeting us and a bit of menu planning, Chamsi took us to the open air market where she knows all the vendors. We interacted with them, everyone was smiling and welcoming as we gathered the ingredients for the meal.Next to the bakery, which was fabulous, then back home to start prep. Chamsi was very organized, which is a requirement in the complex Moroccan cuisine. We got the chicken tagine on the coals, then prepared a series of Moroccan salads, an essential part of every meal, each different from the next. Then we rolled and folded pastries stuffed with seafood, sealed with lots of butter, which went into the oven.The whole time, we got to know Chamsi and learn about her family and life in Casablanca. When dinner was ready, we sat down to enjoy the fruits of our labors.Throughout the rest of our visit to Morocco, our eating experiences have been greatly enriched by what we learned in our afternoon with Chamsi. Due to our work schedules, we were forced to do this tour on a Friday afternoon - not ideal for the market. Chamsi found alternatives that were just as entertaining - and will continue to serve us for the rest of our stay here. We had so much fun shopping and getting all of our long-festering questions answered about Morocco and Moroccan culture. The food was fun to prepare and delicious! I only wish I'd done this tour at the beginning of my stay - it would've been so helpful in my transition to life here in Casablanca.

Purchased red drum from the fish monger.Cooking with Chamsi and learning about Moroccan culture was most enjoyable. Her young son Sami was also fun. We couldn’t have been happier with our evening with Chamsi and her family. At my request, she put together a fabulous vegan feast that we cooked together in her lovely kitchen. With her husband, son and neighbors popping in and out we felt warmly welcomed and a part of a typical evening at their home. And the food! Wow. It was so much fun to assemble a vegetable Tajine and learn the traditional way to cook it. Every element of our meal was delicious! We are grateful to have had such a personal, delicious and delightful dinner with such a warm and interesting family.

After horrific flight cancellations and delays, which caused us to miss our scheduled class session, Maria fit our market visit and cooking class into her very busy schedule even though she had to include us into a very busy family-oriented day. She took us into her home, showed us unparalleled hospitality, involved us in the ingredient preparation and cooking process, and provided a spectacular presentation of the prepared food (couscous, lamb tajine, 4-5 different hot Moroccan salads or vegetable dishes, home-made Moroccan bread and a simple and lovely dessert of cinnamon sprinkled orange slices). The really special experience was the preparation of couscous using the traditional Moroccan way, which takes 2-3 hours, but is truly worth the time. We would both repeat the experience with Maria in a heart-beat, if the occasion presented itself. The class was a true joy.

This day was the highlight of our trip to Morocco. We had a wonderful time with Chamsi and her lovely family. We drove to the market and shopped for meat, fish, spices and vegetables at local vendors. Then we returned to Chamsi's house and cooked a fabulous meal. Chamsi and her family are wonderful. We had a real hands on cooking experience. I cant wait to reproduce these recipes at home for my friends and family!

We love to get immersed in the food and local culture of places we visit. There were three of us- me, my husband and my brother. We are fairly experienced cooks so wanted to do some out of the ordinary things. Chamsi was attentive to this and we ended up doing an incredible stuffed fish dish that I have never seen on a menu. We explored the market first and she took her clues as to what we wanted from that. And she made sure we all got involved in the cooking, not just sitting there watching her do it. We were so stuffed from the delicious food we skipped dinner that night.And she kindly supplied us with written recipes for what we cooked and more. She and her son joined us for our lunch and we shared stories of our lives. We felt like we were visiting a friend.

We really enjoyed the day with our host Chamsi. She was very friendly and made us feel at home from the beginning. The trip to the market was an interesting experience and she explained things as we went along, showing us why she chose certain spices and vegetables. She took her time and didn't rush us through. The visit to the bakery was especially fun. What a huge selection of treats from both France and Morocco!When we returned we set to creating a terrific Moroccan lunch and enjoyed both the creation and the food itself. She then helped us to get a cab (at half the cost of the outbound trip) and wished us well. Overall it was a good day.

We had a wonderful and memorable experience in Casablanca with Chamsi as our host. The market visit gave us a true cultural experience as well as cooking and eating the traditional dishes. It has definitely been the highlight of our trip and will recommend it to our friends!

I booked the market tour and cooking lesson/meal and can’t say enough wonderful things about the whole experience! It was such a delight to spend the afternoon with our host, Chamsi and her son. We felt perfectly welcome in her lovely home and had so much fun cooking and chatting. We cooked a delicious meal (lamb, chicken pastilles, and a variety of Moroccan salads) and learned so much about the Moroccan culture and food. I also appreciated the extensive recipe list we could use once we returned home!

I had a long layover in Casablanca, so I decided to try a cooking class with Maria before flying back to the US. And I am SOOOO glad that I did. Maria tailored the class to cook exactly what I requested, and then added a seasonal option to boot! We fully enjoyed shopping the markets and choosing our preferences to make for dinner. So many options of fresh food, we even made camel burgers, YUM!!!!Chamssi is a wonderful host and made us feel very welcome. This was our first day in Morocco and a great introduction to the food and culture. Almost everything else we ate during the remainder of our trip paled in comparison to the dishes we learned and helped to prepare. HIGHLY recommend this experience to anyone who appreciates authentic and tasty local cuisine!!!!

I have taken cooking classes in Italy, France, Spain, and now Casablanca....by far the most fun and informative was with Chamsi in Casablanca. She is DELIGHTFUL, and not only took us to the food market, but also to the old souk, out to breakfast near the old fortress, around the city to see the beautiful mosque by the sea, to purchase Ramadan treats at a wonderful bakery, and of course to her home to prepare an awesome and delicious meal. She patiently answered our questions and introduced us to her favorite vendors where we sampled olives, spices, and fresh fruit. We couldn't have had a more wonderful time with anyone else!

EXTRAORDINARY!!!I’ve traveled the world to cook with local families and Chamsi & her family were undeniably the most kind, warm, hospitable & knowledgeable hosts!! The market tour was great fun & bringing the fresh purchases home to prepare was amazing. The flavors were so delicious! I recently cooked for 2 weeks in Provence, and I dare say, Chamsi’s recipes were soooooo delicious and equally inspiring! What also was fantastic was the history of the products, food & cookware used to create such amazing flavors. I would love to return & spend a week at Chamsi’s side learning the family secrets of Moroccan cooking. My son Matthew & I dream of Moroccan salads!!!

Chamsi is a professional young lady she came with her husband to pick me up from my hotel with their young son which gives you ,on the on set , an excellent ambiance and the feeling that you are among family. We went to the market for shopping the ingredients of our meal . The market is so diversified that you can find anything you need ( from flowers to sea food) . It was as such an intriguing experience. Then we went home . A nice surprise was that Chamsi,s mother in law was also present. We had tea and started the cooking class . What made me like it the most is Chamsi’s dedication and professionalism . We had fish , chicken, and number of salads all made ala Moroccan style. We had assorted fruits upon my request for dessert because I am diabetic followed by my favorite Moroccan tea . Before the meal I went with her husband Mr Badr to buy the bread. If you are in Casablanca you should not miss this tour . It will not give you only nice fresh food that you took part in making it but will give you also the culture of the roots of the Moroccan cosine.

We had a wonderful time with Chamsi and her family shopping, cooking and eating that took up most of the day! Wandering about the markets with someone who knew the places and the people was an excellent experience. Then to cook and eat the results of our shopping was an experience to remember and to recommend to anyone visiting Casablanca.

We really enjoyed being welcomed into Chamsi's home and learning more about culture in Casablanca. She gave us a tour of two markets, both of which she shops at regularly and knows the merchants well. We then cooked a delicious meal in her home that was created specifically for us. The food was fabulous and the company was warm and friendly. I could not recommend the experience more.

For this foodie/homecook, every minute of this experience was a delight. Chamsi is an amazing host and a patient, knowledgeable teacher. Loved our trip to the market - Chamsi pulls you in so that you are part of her interaction with the vendors, who are ever so willing to tell you everything about their wares - fruits, vegetables, meats, nuts, oils, etc., and my favorite - toasted almond and argan nut butter milled right before your eyes. By the way, DELICIOUS! I did appreciate that this class wasn't a demonstration but very much hands on. Learning about the spices, how to store them, what to mix for specific dishes, salads and appetizers, history of specific dishes, etc. Chamsi made me feel at home and we just chatted away. It was like lunch at a friend's. Looking forward to the tagine that I will be preparing this weekend in the tagine that Chamsi helped me pick out :) Go with Chamsi, you won't regret it. Thanks Chamsi, for a memorable experience.

It was the perfect day spent with a Moroccan family and more! The cooking, the market the house and just being in Chamsi's company was pure joy. She was excellent at communication with me before during and after our experience and she was patient and charming throughout the day....even getting my husband in the kitchen :) and of course she is an incredible cook. It was my first time to Morrocco. I was up for an adventure, but also leery about being in a place not knowing a language spoken or having phone access in case of issues. Let's say that Chamsi and her husband relieved all my fears instantly. They were so accommodating of our diet and instantly felt like you have been friends for years. We were able to visit some amazing markets and ones that tourists don't visit. I appreciated getting a better feel for what the place is really like after you get past the tourist catered shops. The markets were amazing. Sampling olives, learning about different spices and trying some amazing coffee! I know I will always now consider a cooking class through travel spoon / trip advisor for future trips. If you can book with Chamsi...do it. You will not regret it one bit! It was the best excursion of our entire cruise.

My partner and I dined at Chamsi's house in mid-August, and it was awesome! She has a beautiful home, and her husband Badr/son Sammy were both lots of fun too. The meal was amazing and my favorite/most memorable dish was the chicken pastillas. This was one of our best days in Morocco. Chamsi and Badr took us on a tour of the market where we bought veggies and meat for our cooking experience. We made a couple of other touristy stops and had a great time. The cooking took place in their home where we met their son, their nanny and even their dog. We chopped and sauteed, talked about everything, laughed, and took lots of photos. We lingered over a long lunch to enjoy more conversation, and then returned to our hotel.

What fun to be able to go to the fish market with a local to buy our food, then to be in a home in Morocco to actually learn how to cook Moroccan food. Chamsi was a wonderful host and a great cook. She explained all the spices used well and gave us cultural information to help us understand the cooking we did. Overall a great day!

She is Canadian, married to a Moroccan with an Algerian father so is worldly and friendly. Food is prepared in her modern kitchen and you can get as involved as you want to ! Delicious !

I had an amazing experience with Chamsi. She communicated prior to the cooking experience to found out my preferences and give transport instructions. Chamsi picked me up from the tram and then went to her beautiful home. She was extremely hospitable and kind. Chamsi explained so much about Moroccan culture & cuisine, I felt like I had a big step in understanding at the start of my Moroccan trip. I loved going to the market with Chamsi and then cooking with her. She was very patient and explained everything well. And then the best part - getting to eat it all! It was absolutely delicious and well-presented. Chamsi also sent me off with a goody-bag of sweet treats. This experience was amazing and I cannot recommend a Traveling Spoon experience with Chamsi enough!!!

Meet Chamsi

Chamsi says that coming to Morocco can be overwhelming – in a good way! The sounds, the smells, and the local culture can be a mystery to visitors and meeting Chamsi is the perfect way to dig beneath the surface and connect with local life in a more personal and meaningful way. Chamsi is an Algerian-Canadian, married to a Moroccan. She and her husband have lived in Casablanca for nine years and in that time she has come to love the local way of life. Of course, food has been central to her experience! She learned the ins and outs of Moroccan cooking from the best home cook she knows – her mother in law, Lala Naima. They believe that true, authentic Moroccan food is best when prepared at home and she is excited to share her recipes with travelers.

Chamsi is a professional photographer and has a great sense of color and texture, which means her food is both delicious and pleasing to the eye! She lives in a beautiful, newly built home with a large kitchen that is perfect for entertaining. Chamsi has a young son who might be home during your visit.

What to expect

Please note menu might vary. If there are particular dishes you are interested in trying, please include your request in the booking form.

In-home meal: (1-20 guests) Join Chamsi and her family for an authentic Moroccan meal at their lovely home. Chamsi prepares typical home-style dishes that are seasonal and often feature Casablanca’s local seafood. You might try lamb tagine with seasonal vegetables, marinated and grilled seafood, Moroccan lemon chicken with olives, couscous, tchackchouka (roasted bell pepper salad), camel burger or zaalouk (eggplant salad) with homemade bread. You will conclude your meal with a dessert such as milk pastilla, oranges with cinnamon or Moroccan cookies.

Chamsi can prepare a wonderful vegetarian meal, meat is halal or can also buy kosher meat, so be sure to ask if you have any special dietary requests.

Cooking experience: (1-8 guests) Learn to prepare a Moroccan meal with Chamsi in her beautiful open-space kitchen. Be ready to roll up your sleeves and help prepare an authentic Moroccan meal. You’ll cook together for about an hour before sitting down to enjoy the dishes you helped prepare. Some preparation for your meal might be done in advance. Chamsi is excited to share her culture through food and offer an authentic/traditional cooking class in Casablanca. Chamsi's Moroccan cooking class is suitable for couples, family, beginners and children.

Market visit: (1-4 guests) Meet Chamsi at her home in CIL, an upscale neighborhood in Casablanca. After a refreshing drink and getting to know each other, head out to visit the local market. Chamsi will help you navigate the market, which can be overwhelming to explore on your own. She’ll show you where she buys her fresh produce, take you to the meat market (not for the faint of heart but a true, local experience!), and show you the spices that are on offer. Chamsi can help you do a bit of shopping if you’re searching for a certain ingredient. Once your market experience is complete you’ll head back to Chamsi’s home by car to get cooking!

Please note that since Friday is a prayer day, the Friday morning market might not be as active as usual and some stalls might be closed. The evening Friday market tour is not offered.

Notes: This is a family friendly experience, kids are welcome!

Please note that for experiences during Ramadan there will be some changes due to the holiday. Please note that you're not allowed to eat or drink in public. For dinner experiences booked during this time, dinner will be slightly later, whenever the sun sets. For market tour experiences, there is no tasting allowed at the market during Ramadan, so Chamsi will provide a tour and you will buy ingredients and return to her home for the remainder of the experience where you will taste them.

This experience was definitely unforgettable! I'm so happy my boyfriend and I decided to try this out. Chamsi and her family are lovely hosts with such open hearts and kind spirits. Overall, we were surprised at the eloquent lifestyle of this area in Casablanca. It's definitely different than the rural parts of Morocco we saw in the rest of our trip! Chamsi and her family showed us a real, authentic perspective and were happy to answer any questions we had about Morocco.
It's hard to say what my favorite part of the experience was, but some of the highlights were definitely spending some nice quality time with locals and getting to see all the markets. I'm also very happy to bring home some new cooking ideas!

I can not express enough the wonderful experience I had with Chamsi Dib. I did not know what to expect and she went above and beyond anything I could have imagined. From the start, Chamsi answered my call from the taxi, spoke to my taxi driver to give directions. Upon arrival she greeted me at the with a wide and welcoming smile and invitation into her home. I was served tea and locally grown treats! She sat down with me to discuss my preferences. Just the overall atmosphere in her home was friendly and inviting! I felt as if we were old friends. I immediately trusted that I was in good hands and about to have an experience of a lifetime! I was not wrong! Chamsi has an generous personality. She was easy to get along with during my time with her. You could tell that she took pride and care in teaching others about her craft and culture. After setting our lunch menu, off we went to the market to pick up the items we needed for cooking. Chamsi was careful to advise me of local cultural protocol on the streets. I tried not to act like a tourist, but I was pretty clueless and she gently guided throughout our time shopping so that I was able to be safe and have a positive experience. Hanging out in the her kitchen and cooking was like being with my close girlfriend or sister. As Chamsi taught me about the Moroccan spices, meats and vegetables, we laughed and traded cooking tips and secrets! I learned so.much about the local popular foods and traditional Morocco ways of cooking. I was able to sit and enjoy lunch with her beautiful son and husband. During lunch, I learned more about local culture. Chamsi's husband even offered to take my brother golfing. They are a warm and gracious family. I could have stayed longer but my ship was leaving. Chamsi had already arranged with my taxi driver for a pick up and her sweet husband made sure the taxi got me back to the right place and paid my fare! Chamsi was the kindest person I’ve met in Morocco. Our experience was beyond awesome! We experienced a shopping trip to the local market in addition to a cooking class. I, unfortunately, did not have a hair straightener with me that worked. She went out of her way to accommodate me and direct me to a store where I could find one. The cooking class introduced us to using spice-not just pinching spice into the food. With in 5 minutes I truly felt “family” in her house!

We met Chamsi at her house. She was very hospitable offering us tea and Moroccan pastries. We went to the market and bought the ingredients for a chicken tagine. We returned to the house and prepped the vegetables. With Chamsi guiding us all the way. She set a very welcoming table on which we ate chicken tagine and couscous. Delicious! See the pictures. This was the best six hours of pour entire two week vacation in Portugal, Spain and Morocco! Touring the markets to buy our produce was so interesting and enjoyable. It also gave me the chance to buy some spices to take home (and they are cheap and so much better than the store bought spices). Chamsi was so knowledgeable and shared all her insights. Getting to see the community bake house behind the scenes is something tourists would never have known about or been able to do. Chamsi's home was beautiful and the cooking experience was just wonderful. She allowed us to choose the dishes we wanted to cook and gave clear instructions for the preparation process. The food was so delicious I can't come up with enough words to describe it! If you're in any doubt about doing this, just say yes. You won't regret it! What a great way to start our vacation in Morocco! We selected this cooking class based on internet reviews and am glad to pass along our experience. We were met at our hotel by Chamsi who immediately engaged us with her love and enthusiasm for all things Morocco. We had a great time shopping with her at the local market and we were encouraged to smell spices, sample local dates and nuts, watch her select all of the fresh local produce, and we selected the protein. For us it was shrimp for appetizers and chicken for the main dish. Within a few hours of cooking, she made us feel more like family than guests. The meal was “over the top” delicious and the wine was perfect. She blended all of the seasonings and it seemed like all of our tastebuds were firing at once. Five stars for this young lady and a repeat visit by us if we return to Morocco!

Our experience cooking Moroccan Tajine with Chamsi was delightful. It felt like an physical and intimate experience as we met her family and learned a bit about the history behind Moroccan Tajine as well as her own background. Her entire family was very friendly and welcoming. The cooking process felt professional and the pace was good. We enjoyed chatting with Chamsi, sharing stories and taking photos over Zoom. The final meal was amazing!! I’m sure this isn’t our last encounter with Chamsi. We hope there will be more Moroccan meal offerings in the future with traveling spoon. It was nice to meet you Chamsi! Loved every minute! The last days of our holiday were spent in Casablanca. With the help of Chamsi we had the opportunity to learn how to shop and cook like a Moroccan!. It was a fun day spent preparing delicious food purchased that morning from the market and local bakery. The butcher prepared our lamb for the tagine and our squid and prawns were cleaned and cut to order. Chasmi welcomed us into her beautiful home to cook and eat the delicious results! It was so much fun!!! Thank you Chasmi for making it one of the highlights of our trip!

A wonderful day! I had a wonderful day with Chamsi! I Highly recommend the market tour and cooking class with her. I recently moved to Casablanca, and Chamsi made me discover the very nice Maarif Market, and meet all her favorite producers. We bought high quality products at reasonable prices. Chamsi taught me how to cook chicken tajine with olives and lemon, lamb briwates, many vegetables salads as appetizers and a delicious milk pastilla. Chamsi was very nice, fun, patient and a wonderful teacher ! She also gave me many tips, as a new comer in Casablanca ! We then shared this delicious meal with her husband. Delightful cooking class in Casablanca. We enjoyed a delightful cooking class with Chamsi . She has a lovely open, relaxed and welcoming manner. Her set up for the day was very thorough . The market experience when buying all the food for the day, is enlightening. We did virtually all the food preparation and cooking with Chamsi guiding the way and through that learned a lot about Moroccan food and culture. The end product was delicious. Being a Saturday her husband was able to join us for lunch which created a real family setting . All in all a great way to spend a relaxing day and I can assure you won’t need dinner that evening .

One of my best Moroccan memories! My cooking lesson with Chamsi Dibs was a wonderful way to start the New Year! My schedule changed, and she was kind enough to move my cooking lesson to January 1. The lesson started with a shopping trip to the market. I was amazed by the quality and variety of the produce. Then it was on to the fresh chickens to choose one for our tagine. Finally, we stopped at an amazing bakery to buy treats for desert. I received great instructions on preparing mint tea, a beautiful Moroccan salad, and lemon chicken tajine. Chamsi's English language skills are impeccable. While at her home she also provided insights into the typical Moroccan home and lifestyle. The food we prepared was absolutely delicious. My only regret was that I was jet-lagged and lacked the appetite necessary to enjoy all that wonderful food! I will repeat this experience again if I return to Casablanca. Chamsi, thank you again for a wonderful and delicious afternoon.

This was by far my favorite activity while in Casablanca. Chamsi and her family were warm and welcoming and she is a fantastic cook and hostess. We did the traditional salads, monk fish appetizer and lamb tangine. All delicious and wonderful. Her husband, son and housekeeper were fun and engaging. The trip to the market and bakery were great. I even went back to the bakery a few days later - so delicious. it was so much fun. I cannot recommend this enough. Her family is warm and delightful and her home is lovely and welcoming. It was a blast

I love learning about culture through food and Chamsi's cooking class was a great and fun introduction to Morocco. We shopped for spices (oh, the spices!!), fresh vegetables, fish and lamb at a local open-air market, watched the making of flat breads and picked out sweet fried dough from a pastry shop. It was fun to watch our cooking teacher, Chamsi, interact with the shopkeepers and to see ordinary daily life. Back at her gracious home, we made lamb tagine and a lovely assortment of dishes while drinking wine, chatting and laughing. Everything was delicious and the lamb tagine was the best ever. I just replicated the recipe at home and WOW, YAY and YUM! (Don't forget to pick up spices for the great recipes she gives you as they are essential).

We had a wonderful Traveling Spoon experience with Maria! With her we had our first ever Moroccan shopping experience (a great way to get our feet wet in the ubiquitous fresh produce, spice, and whatever-you-need markets), and learned how to construct a tower of delicious vegetable tagine, mash up a peppery-tomatoey taktouka and a tomatoey-eggplantey zaalouk, carmelize a quince…and layer and fold up a beautiful almond-chicken bastella (bastila)! Maria was a gracious hostess, sharing her kitchen and her beautiful Moroccan “reception room” (as she explained, a tradition in Moroccan households) and a good instructor, explaining clearly what and how to prepare everything. I learned some very useful things from her to apply to Moroccan recipes.Our shopping, cooking, and meal with Maria was part of my friend’s special birthday trip, and Maria made it memorable indeed. We really appreciated that she included the bastila to celebrate (rather tricky to make in a single morning along with everything else). I would arrange another cooking experience with Maria, and with Traveling Spoon, in a hot minute.

My mom and I did a cooking class with Chamsi and not only was it the highlight of Casablanca, it was our favorite experience during our whole time in Morocco! Chamsi is a very knowledgeable cook, and was a lot of fun to cook with and talk to! After picking us up from our hotel, she took us to the market where she buys a lot of her groceries. It was fun shopping with a local and seeing how she picks out her produce. After that we went to her beautiful home and started cooking. Chamsi was very flexible about what we cooked and let us decide the menu (with some great suggestions from her). She let us be very involved in the whole process and talked about her cooking strategies. She also told us a lot about Moroccan culture. The meal we made was a feast! Everything was delicious. We also liked how the whole experience was leisurely and laid back. After our class, Chamsi emailed us all the recipes we made, and some extra ones from her personal recipe collection. The whole experience from beginning to end was a delight.

Maria was a fantastic host!! We learn a lot about Moroccan cooking and our food turned out great. She is a great teacher and cook. It was so nice to sit in her traditional Moroccan room to eat! It was very impressive. I would highly recommend arranging your transportation through her as it was super easy.

I loved this activity. Learned to cook a lot of new allergy-free recipes and got an insider’s view of Casablanca’s food scene. The food was delicious and dining with Chamsi’s family was probably the best part of the14-dish dinner, besides the food.

We had a very good time. We were welcomed into Chamsi's delightful home with mint tea and local patisseries. We then went to the food market and purchased the ingredients for lunch including local fish. The fish and vegetables were incredibly fresh and just walking around the market, among the very friendly vendors, was a delight. We then went back to Chamsi's home and helped her prepare dishes from local recipes, including several different vegetable salads. The final event was sitting down to a delicious lunch.I would thoroughly recommend this tour. Chamsi was a terrific host and spoke excellent English. As an added benefit the venue was wheelchair accessible.

This is an excellent way to start a Moroccan adventure. After greeting us and a bit of menu planning, Chamsi took us to the open air market where she knows all the vendors. We interacted with them, everyone was smiling and welcoming as we gathered the ingredients for the meal.Next to the bakery, which was fabulous, then back home to start prep. Chamsi was very organized, which is a requirement in the complex Moroccan cuisine. We got the chicken tagine on the coals, then prepared a series of Moroccan salads, an essential part of every meal, each different from the next. Then we rolled and folded pastries stuffed with seafood, sealed with lots of butter, which went into the oven.The whole time, we got to know Chamsi and learn about her family and life in Casablanca. When dinner was ready, we sat down to enjoy the fruits of our labors.Throughout the rest of our visit to Morocco, our eating experiences have been greatly enriched by what we learned in our afternoon with Chamsi. Due to our work schedules, we were forced to do this tour on a Friday afternoon - not ideal for the market. Chamsi found alternatives that were just as entertaining - and will continue to serve us for the rest of our stay here. We had so much fun shopping and getting all of our long-festering questions answered about Morocco and Moroccan culture. The food was fun to prepare and delicious! I only wish I'd done this tour at the beginning of my stay - it would've been so helpful in my transition to life here in Casablanca.

We couldn’t have been happier with our evening with Chamsi and her family. At my request, she put together a fabulous vegan feast that we cooked together in her lovely kitchen. With her husband, son and neighbors popping in and out we felt warmly welcomed and a part of a typical evening at their home. And the food! Wow. It was so much fun to assemble a vegetable Tajine and learn the traditional way to cook it. Every element of our meal was delicious! We are grateful to have had such a personal, delicious and delightful dinner with such a warm and interesting family.

After horrific flight cancellations and delays, which caused us to miss our scheduled class session, Maria fit our market visit and cooking class into her very busy schedule even though she had to include us into a very busy family-oriented day. She took us into her home, showed us unparalleled hospitality, involved us in the ingredient preparation and cooking process, and provided a spectacular presentation of the prepared food (couscous, lamb tajine, 4-5 different hot Moroccan salads or vegetable dishes, home-made Moroccan bread and a simple and lovely dessert of cinnamon sprinkled orange slices). The really special experience was the preparation of couscous using the traditional Moroccan way, which takes 2-3 hours, but is truly worth the time. We would both repeat the experience with Maria in a heart-beat, if the occasion presented itself. The class was a true joy.

This day was the highlight of our trip to Morocco. We had a wonderful time with Chamsi and her lovely family. We drove to the market and shopped for meat, fish, spices and vegetables at local vendors. Then we returned to Chamsi's house and cooked a fabulous meal. Chamsi and her family are wonderful. We had a real hands on cooking experience. I cant wait to reproduce these recipes at home for my friends and family!

We love to get immersed in the food and local culture of places we visit. There were three of us- me, my husband and my brother. We are fairly experienced cooks so wanted to do some out of the ordinary things. Chamsi was attentive to this and we ended up doing an incredible stuffed fish dish that I have never seen on a menu. We explored the market first and she took her clues as to what we wanted from that. And she made sure we all got involved in the cooking, not just sitting there watching her do it. We were so stuffed from the delicious food we skipped dinner that night.And she kindly supplied us with written recipes for what we cooked and more. She and her son joined us for our lunch and we shared stories of our lives. We felt like we were visiting a friend.

We really enjoyed the day with our host Chamsi. She was very friendly and made us feel at home from the beginning. The trip to the market was an interesting experience and she explained things as we went along, showing us why she chose certain spices and vegetables. She took her time and didn't rush us through. The visit to the bakery was especially fun. What a huge selection of treats from both France and Morocco!When we returned we set to creating a terrific Moroccan lunch and enjoyed both the creation and the food itself. She then helped us to get a cab (at half the cost of the outbound trip) and wished us well. Overall it was a good day.

I booked the market tour and cooking lesson/meal and can’t say enough wonderful things about the whole experience! It was such a delight to spend the afternoon with our host, Chamsi and her son. We felt perfectly welcome in her lovely home and had so much fun cooking and chatting. We cooked a delicious meal (lamb, chicken pastilles, and a variety of Moroccan salads) and learned so much about the Moroccan culture and food. We fully enjoyed shopping the markets and choosing our preferences to make for dinner. So many options of fresh food, we even made camel burgers, YUM!!!!Chamssi is a wonderful host and made us feel very welcome. This was our first day in Morocco and a great introduction to the food and culture. Almost everything else we ate during the remainder of our trip paled in comparison to the dishes we learned and helped to prepare. I have taken cooking classes in Italy, France, Spain, and now Casablanca....by far the most fun and informative was with Chamsi in Casablanca. She is DELIGHTFUL, and not only took us to the food market, but also to the old souk, out to breakfast near the old fortress, around the city to see the beautiful mosque by the sea, to purchase Ramadan treats at a wonderful bakery, and of course to her home to prepare an awesome and delicious meal. She patiently answered our questions and introduced us to her favorite vendors where we sampled olives, spices, and fresh fruit. We couldn't have had a more wonderful time with anyone else!

EXTRAORDINARY!!!I’ve traveled the world to cook with local families and Chamsi & her family were undeniably the most kind, warm, hospitable & knowledgeable hosts!! The market tour was great fun & bringing the fresh purchases home to prepare was amazing. The flavors were so delicious! I recently cooked for 2 weeks in Provence, and I dare say, Chamsi’s recipes were soooooo delicious and equally inspiring! What also was fantastic was the history of the products, food & cookware used to create such amazing flavors. Chamsi is a professional young lady she came with her husband to pick me up from my hotel with their young son which gives you ,on the on set , an excellent ambiance and the feeling that you are among family. We went to the market for shopping the ingredients of our meal . The market is so diversified that you can find anything you need ( from flowers to sea food) . It was as such an intriguing experience. Then we went home . A nice surprise was that Chamsi,s mother in law was also present. We had tea and started the cooking class . What made me like it the most is Chamsi’s dedication and professionalism . We had fish , chicken, and number of salads all made ala Moroccan style. We had assorted fruits upon my request for dessert because I am diabetic followed by my favorite Moroccan tea . Before the meal I went with her husband Mr Badr to buy the bread. If you are in Casablanca you should not miss this tour . It will not give you only nice fresh food that you took part in making it but will give you also the culture of the roots of the Moroccan cosine.

Wandering about the markets with someone who knew the places and the people was an excellent experience. For this foodie/homecook, every minute of this experience was a delight. Chamsi is an amazing host and a patient, knowledgeable teacher. Loved our trip to the market - Chamsi pulls you in so that you are part of her interaction with the vendors, who are ever so willing to tell you everything about their wares - fruits, vegetables, meats, nuts, oils, etc., and my favorite - toasted almond and argan nut butter milled right before your eyes. By the way, DELICIOUS! I did appreciate that this class wasn't a demonstration but very much hands on. Learning about the spices, how to store them, what to mix for specific dishes, salads and appetizers, history of specific dishes, etc. Chamsi made me feel at home and we just chatted away. It was like lunch at a friend's. Looking forward to the tagine that I will be preparing this weekend in the tagine that Chamsi helped me pick out :) Go with Chamsi, you won't regret it. Thanks Chamsi, for a memorable experience.

It was my first time to Morrocco. I was up for an adventure, but also leery about being in a place not knowing a language spoken or having phone access in case of issues. Let's say that Chamsi and her husband relieved all my fears instantly. They were so accommodating of our diet and instantly felt like you have been friends for years. We were able to visit some amazing markets and ones that tourists don't visit. I appreciated getting a better feel for what the place is really like after you get past the tourist catered shops. The markets were amazing. Sampling olives, learning about different spices and trying some amazing coffee! I know I will always now consider a cooking class through travel spoon / trip advisor for future trips. If you can book with Chamsi...do it. You will not regret it one bit! It was the best excursion of our entire cruise.

This was one of our best days in Morocco. Chamsi and Badr took us on a tour of the market where we bought veggies and meat for our cooking experience. We made a couple of other touristy stops and had a great time. The cooking took place in their home where we met their son, their nanny and even their dog. We chopped and sauteed, talked about everything, laughed, and took lots of photos. We lingered over a long lunch to enjoy more conversation, and then returned to our hotel.

What fun to be able to go to the fish market with a local to buy our food, then to be in a home in Morocco to actually learn how to cook Moroccan food. Chamsi was a wonderful host and a great cook. I had an amazing experience with Chamsi. She communicated prior to the cooking experience to found out my preferences and give transport instructions. Chamsi picked me up from the tram and then went to her beautiful home. She was extremely hospitable and kind. Chamsi explained so much about Moroccan culture & cuisine, I felt like I had a big step in understanding at the start of my Moroccan trip. I loved going to the market with Chamsi and then cooking with her. She was very patient and explained everything well. And then the best part - getting to eat it all! It was absolutely delicious and well-presented. Chamsi also sent me off with a goody-bag of sweet treats. This experience was amazing and I cannot recommend a Traveling Spoon experience with Chamsi enough!!!

    You can cancel your reservation up until 48 hours before your experience for a full refund minus a 3% processing fee. Experiences within 48 hours are not refundable.

    If you have a question for your host, you can include a note in the field "Write a note to your host" during the booking process. Once your booking is confirmed, you will be emailed your host's direct contact information and you will also be able to message the host through your profile.     Most of our hosts are able to accommodate dietary restrictions and allergies, including vegetarian and gluten free options. For vegetarian travelers, we have an icon on each host profile to indicate whether that host can also offer a fully vegetarian menu.     Your safety and security are our top priority. To ensure this, Traveling Spoon personally vets 100% of all hosts, including an in-person host visit, to ensure each host and experience meets our strict quality requirements.

    Some hosts offer transportation as an optional add-on for travelers. Typically this is round trip transportation with pick up and drop off at your hotel. Pricing is quoted per car. Specific instructions for transportation will be provided in your confirmation details when your booking is confirmed.

    Many of our hosts accommodate solo travelers. You can see if a host accepts solo travelers by looking at the traveler range found next to the experience descriptions on the host profile (indicated by the numbers in parentheses next to "In-home meal", "Cooking experience" and "Market visit").

    Most of our Traveling Spoon experiences are incredibly family friendly and can accommodate infants and children. If a host is unable to accommodate children that will be noted in the “Notes” section of their profile. Our child pricing policy is children aged 5-11 are 50% off, and infants aged 0-4 are free.
