Your host Tania
Tania is an agronomist and food safety specialist who loves singing, playing the piano, and traveling. Her parents may also be part of your Traveling Spoon experience and will help with the cooking and hosting. Her father is a former butcher and is very serious about his meats! Now he is retired and grows fruits and vegetables in their family garden on the outskirts of Beirut. He also enjoys making his own arak (the Lebanese national alcoholic drink made from grapes and anise seeds). Most of the produce for the home comes from the garden and is local, fresh and organic. Tania’s mother is a home cook who has been cooking traditional meals for the family all her life using family recipes. They are a family who enjoys gardening, talking about food, cooking and eating together. Enjoy learning to make traditional falafel and tarator dipping sauce during this interactive, online class that gives you a glimpse into Lebanese food and culture.

  • 1 cup dry peeled and split fava beans (soaked overnight)
  • 1 cup dry chickpeas (soaked overnight)
  • 2 tsp ground dry coriander
  • 5 whole cloves garlic
  • 1/2 tsp ground white pepper
  • Salt to taste
  • 1/2 tsp Bicarbonates or baking soda
  • 1 tsp baking powder
  • Oil for frying
  • 4 pita breads
  • 1/4 cup parsley, chopped
  • 1 tomato, sliced
  • 4-5 leaves lettuce, crisp romaine or green leaf (optional)
  • 2-3 red radishes, sliced (optional)
  • 4 tbsp tahini
  • 1 cloves garlic, crushed
  • 1 lemon, juiced
  • Salt to taste

"Making a 30th birthday feel fun and festive during the pandemic is quite a feat, but Tania succeeded! She thoughtfully added a traditional Lebanese cake to the menu and had a candle on hand as we sang happy birthday. Tania lead our group of seven (in three time zones!) through three delicious Lebanese dishes- sharing her mom’s secret spice mixture and techniques to perfect our cutting! She mixed her experience and knowledge with humor to create an enjoyable afternoon for all. Tania is funny, witty and patient.
