A wealth of Greek culinary knowledge, Christina grew up in a farming family in a small village in western Greece, where she still gets her local eggs, cheese, organic extra virgin olive oil, dried herbs, and hand-collected sea salts. Christina is passionate about baking traditional Greek dishes that she learned from her grandmother. After attending culinary school, Christina perfected her Greek cooking techniques and is delighted to teach guests about Greek vegetarian dishes.   • 10 oz (250 g) tender, grape vine leaves
  • 2 bunches spring onions, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, thinly sliced
  • 1 cup (250 ml) olive oil, divided
  • 1 3/4 cups (400 g) Carolina or other long grain rice
  • 1 3/4 cups (400 g) water
  • 1/2 bunch fresh cilantro, chopped
  • 1/2 bunch fresh dill, chopped
  • 1 bunch mint, chopped
  • 1 lime, zested
  • 1 lemon, juiced
  • 1 lemon, sliced into 4-5 slices
  • 1/2 large cucumber, unpeeled
  • 1 1/2 cups plain full-fat Greek yogurt
  • 2 large garlic cloves, finely minced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp white vinegar
  • 1 tbsp fresh dill, minced
  • 1/2 tsp salt
  • 4 ripe red tomatoes, sliced
  • 1 cucumber, diced into cubes
  • 1 small green bell pepper, sliced (optional)
  • 1 red onion, sliced
  • 1 handful Greek Kalamata olives
  • 1/2 cup Feta Cheese, cubed
  • 1 tbsp capers (optional)
  • 2 tbsp olive oil
  • 1 tsp dried oregano (preferably wild Greek oregano)

"This was a fun experience. I learned to make spanakopita which I thought would be impossible but with Christina's guidance it worked! It was really a personal experience and although we were over a thousand miles and several time zones apart, she could have been in my kitchen. She is very patient and makes it fun. BTW, the class description says Christina is very serious but that was not my impression at all. She was very warm, encouraging and made this really fun."
