  • 2 cups flour
  • 1 stick butter
  • 1/2 tsp salt
  • 1/2 cup water or milk
  • *If you prefer to use a premade pie crust, ignore above 4 ingredients
  • 4 cups zucchini, sliced into quarter inch thick rounds (can also use broccoli or asparagus instead)
  • 1 cup (200 ml) half and half OR ½ cup heavy cream and ½ cup milk
  • 4 eggs
  • 1/2 cup (50 g) parmesan, grated OR goat, swiss cheese or cheddar cheese
  • 1 tbsp fresh basil or mint, finely chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Mesclun or other salad greens
  • 4-5 red radishes, thinly sliced or cherry tomatoes (optional)
  • 1/2 tsp shallot, minced (optional)
  • 1/2 tsp Dijon mustard
  • 1/4 tsp freshly ground black pepper
  • 3/4 tsp salt
  • 1 tbsp sherry, red or white wine vinegar
  • 3 tbsp extra virgin olive oil (or sunflower or colza oil)
