2 cups flour
1 stick butter
1/2 tsp salt
1/2 cup water or milk
*If you prefer to use a premade pie crust, ignore above 4 ingredients
4 cups zucchini, sliced into quarter inch thick rounds (can also use broccoli or asparagus instead)
1 cup (200 ml) half and half OR ½ cup heavy cream and ½ cup milk
4 eggs
1/2 cup (50 g) parmesan, grated OR goat, swiss cheese or cheddar cheese
1 tbsp fresh basil or mint, finely chopped
1 tbsp olive oil
Salt and pepper to taste
Mesclun or other salad greens
4-5 red radishes, thinly sliced or cherry tomatoes (optional)
1/2 tsp shallot, minced (optional)
1/2 tsp Dijon mustard
1/4 tsp freshly ground black pepper
3/4 tsp salt
1 tbsp sherry, red or white wine vinegar
3 tbsp extra virgin olive oil (or sunflower or colza oil)
