Kavitha has been in the food business for many years and ran an Indian street food business in the outdoor markets of Brooklyn and Manhattan. She has also hosted and catered vegan and vegetarian events. Kavitha comes from a family of yogis and people who believe that the key to good health lies in good nutrition. She has first-hand seen the positive effects that simple tweaks in nutrition can have on a person's physical, mental and spiritual health, without compromising on taste or experience. Kavitha's cuisine is all about a simple, plant-forward lifestyle. She is passionate about teaching guests an ayurvedic cleanse recipe for South Indian masala khichri (lentil and rice mash with spices, vegetables and ghee) and yogurt raita. It is perfectly balanced South Indian stew as per Ayurveda (the ancient Indian system of medicine and nutrition) - easily digested, grounding and detoxifying and totally delish!

  • 1 tsp. chana lentil (split chickpeas)
  • 1 tsp. washed urad lentil (split skinless matpe lentil)
  • 1/2 tsp. fenugreek seeds
  • 4 large dry red Kashmiri chilies
  • 1/2 cup grated fresh coconut
  • 1 tbsp. coriander seeds
  • 2 star anise
  • 1 tsp. poppy seeds
  • 2 tsp. cumin seeds
  • 1.5 cups non-sticky short grain rice
  • 1.5 cups toor lentil (split yellow pigeon peas)
  • 6-8 green beans, cut into 1cm. pieces
  • 1 medium carrot, diced into 1cm. pieces
  • 1/4 cup green peas
  • 1/4 cup white onion diced into 1cm. pieces
  • 2 tbsp. ghee (clarified butter)
  • 1/4 cup dry red kidney beans, soaked for 4 hours and boiled in water till al dente
  • 1/4-1/2 tsp. turmeric powder
  • 1/2 tsp. mustard seeds
  • 1/2 to 1 tsp. red chilli powder (depending on how spicy you prefer)
  • 8 curry leaves
  • 8 cashews, roughly chopped into halves
  • 3 roma tomatoes, pureed
  • 1/2 cup tamarind juice
  • 2 tbsp. ghee
  • Pinch of asafoetida
  • Salt to taste
  • 2-3 tbsp. cilantro leaves, chopped, for garnish
  • 1 cup 2% milk yogurt
  • 1/4 cup peeled and grated cucumber
  • 1/2 tsp. cumin powder
