Learn to make tacos and salsa from scratch from a Mexican cookbook author! Margarita was born in Mexico City and has lived there for her entire life. She first started cooking with her grandmother, who was a wonderful cook and taught Margarita to make traditional Mexican dishes in their kitchen. Passionate about food and cooking, Margarita took her first cooking classes at the age of 15. She continued taking cooking courses and went on to work as a food stylist for over 15 years, publishing her recipes and beautiful pictures in several magazines. Margarita continued in these various endeavors until she opened her own business 7 years ago, making cookies (over 60 different varieties!) for local businesses. Margarita is passionate about cooking and particularly teaching and sharing her culinary knowledge with others. She says, “If you want to understand Mexico as a country, you have to taste its flavors. I want to share the richness of Mexico and its great culture of food with others.”

  • You will need a blender (or molcajete), a tortilla press (or rolling pin), a cast-iron griddle or pan, 2 kitchen cloths and 2 plastic (Ziploc) freezer bags
  • You don't need to prep or chop ingredients ahead of class as Margarita has tips for how to do this during the class
  • If you prefer to make salsa verde with tomatillos instead of salsa rojo, please inform Margarita of your preference when making your booking

  • 1/2 cup vegetable oil
  • 2 lbs masa corn flour (note, you will need to find “masa harina” or "masa corn flour" for this class; coarse stone ground polenta or coarse corn meal will not work for this. Whole Foods carries the Bob’s Red Mill Masa Harina which will work well)
  • ½ lb chicken breast, cooked and shredded
  • ¼ cup oil (corn, canola)
  • 4-5 lettuce leaves
  • ¼ cup sour cream
  • ¼ cup grated queso fresco or other fresh cheese
  • 1 lb tomatoes (substitute with tomatillos if making salsa verde or green sauce)
  • ½ onion
  • 1 clove garlic
  • 1 serrano pepper (optional)
  • 1 cup fresh cilantro leaves
  • 1/4 lb cheddar cheese, grated
  • Salt to taste

"Margarita's online Mexican Taco class was fantastic! I did this with my mother and all of us were in different countries, Margarita was able to accommodate the time difference and we had a great time preparing all the food. Margarita made it easy to follow and the pace was just right for us that aren't quite as experienced rolling out tortillas. We ended up with a fantastic meal and a completely different taste of Mexico for my mother, she is looking forward to trying it again, Margarita also gave us some good tips on some variations to try next time.
