WHAT WILL YOU COOK TOGETHER:
  • Aloo Puri, puffed Indian bread served with savory potatoes

INGREDIENTS:
  • 1 ½ cup whole wheat flour
  • 1 tsp semolina (optional)
  • 2 tsp oil
  • ½ tsp salt
  • ½ cup water
  • Oil for deep frying
  • 1 ½ cup boiled potatoes, cubed
  • 3 tbsp cooking oil
  • I cup onions, chopped
  • 1 ½ tsp ginger, grated
  • I tsp green chilli, chopped (optional)
  • I cup tomatoes, chopped
  • 2 tbsp cilantro, chopped
  • 1 ½ tsp coriander powder
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder
  • ½ tsp garam masala
  • 1 tsp cumin seeds
  • A pinch of asafoetida (optional)
  • I tsp dry mango powder (optional)
  • 1 cup water
  • 2 green cardamoms
  • 2 cloves
  • 1 tbsp grated ginger
  • 4 tsp black tea leaves
  • ½ cup milk
  • 3 ½ cup water
  • 4 tsp sugar (optional)

Shveta will also teach you how to make masala chai, an aromatic and creamy Indian tea loved by people all over the world. Shveta, a former primary school teacher who runs a homestay in a suburb of Jaipur, learned how to cook from her mother. She enjoys sharing the kitchen with her husband, Kul, now retired, used to head an oil company. World travelers, they are an ideal couple with Shveta cooking and Kul entertaining.
