Tandoori chicken and palak paneer are two of the most popular North Indian dishes that you can learn to cook from Shveta, a host from Punjab, the North Indian region from where these dishes originated. Tandoori chicken is a delectable dish of chicken legs that have been marinated in a yogurt and spice blend and traditionally barbecued in a hot tandoor oven (a cylindrical shaped clay oven). Shveta will show you how to cook them in an oven or grill. She also teaches you how to make palak paneer comprised of Indian cheese cooked in a creamy spinach sauce. Shveta, a former primary school teacher who runs a homestay in a suburb of Jaipur, learned how to cook from her mother. She enjoys sharing the kitchen with her husband, Kul, now retired, used to head an oil company. World travelers, they are an ideal couple with Shveta cooking and Kul entertaining.

  • 1 lb chicken legs and bone-in breasts
  • 2 tbsp fresh squeezed lemon juice
  • 1/2 cup yogurt, drained
  • 1 tsp fresh ginger paste
  • 1 tsp fresh garlic paste
  • 1 tsp garam masala
  • 1 tbsp mustard (or other) oil
  • 1 red or white onion, sliced into rings
  • 1 lb (16 oz) spinach
  • 7 oz or 2 cups paneer (Indian cheese), cubed
  • 5 cloves garlic
  • 1 tsp ginger, grated
  • 2 medium yellow or red onions, chopped
  • 1-2 green chilies, finely chopped
  • 1 tsp cumin seeds
  • 1 1/2 tsp red chili powder (Kashmiri chili or cayenne)
  • 1 tbsp heavy cream
  • 2 tbsp ghee (or butter)
  • 1/2 tsp ground turmeric
  • 1/2 tsp black salt (if available certainly enhances the taste of tandoori chicken)
  • Salt to taste

"Online cooking with Shveta was the perfect way to connect our extended family remotely during covid-19! We had nine food-loving cousins in the class from San Francisco to Seattle and New York. Ages from 39 to 5 were all on the call and able to follow along with Shveta. My cousin’s boyfriend Pranai even said the resulting meal tasted just as good as the food he gets at temple!
