Andrea loves to cook - her kitchen is always open and pretty much her favorite place to be! Andrea moved to the USA from France, where she had lived for 25 years. Her family and friends all over the world have definitely influenced her culinary skills, but Andrea is especially inspired by her son - a formally trained French chef. Andrea and her son experiment vicariously through one another's cooking experiences. Andrea strives to ensure that her food is presented attractively on the plate and finds it extremely important that taste is enhanced naturally through herbs, spices and essences. In this class Andrea is excited to share her Christmas recipes, her specialties from Switzerland.

  • 4 1/2 tbsp flour
  • 3/4 cup milk (milk should be warm)
  • 3/4 tsp salt
  • 1/4 tsp ground pepper
  • 1/4 tsp nutmeg
  • Cheese Soufflé
  • 4 egg yolks
  • 6 egg whites
  • 1/4 cup grated cheese (Comté, Gruyère or Emmental)
  • 2 tablespoons Parmesan cheese (finely grated)
  • Salmon Soufflé
  • 3 egg yolks
  • 3 egg whites
  • 2 tbsp poppy seeds
  • 6 slices (150 g) smoked salmon, diced
  • Dough
  • 11 tbsp (150 gr) butter (room temperature)
  • 1/2 cup (100 gr) powdered sugar
  • 1 pinch of salt
  • 1 cup (150 gr) flour
  • 1 cup (125 gr) ground hazelnuts
  • Custard
  • 1 cup (125 gr) ground hazelnuts
  • 6 ½ tbsp (80 gr) powdered sugar
  • 1 tbsp vanilla essence
  • 2/3 cup (150 ml) heavy cream
  • Icing sugar to sprinkle on top
