WHAT WILL YOU COOK TOGETHER:
  • Prawn and cauliflower caldine, a creamy coconut milk based stew
  • Rava fried fish, marinated, batter fried fish
INGREDIENTS:
  • 1/2 lb raw shrimp, peeled and deveined
  • 1/2 tsp ginger garlic paste (fresh ginger and garlic chopped and blended)
  • 1/2 tsp ground turmeric
  • 1/4 tsp ground cumin
  • 2 tbsp oil
  • 2 tbsp coconut or apple cider vinegar
  • 2 green chilies, slit
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • 12 medium florets, cauliflower
  • 1 1/2 cups coconut milk
  • 1/4 cup fresh cilantro, chopped for garnish
  • Salt to taste
  • 4 white fish steaks or fillets
  • 1 tsp ground turmeric
  • 2 green chilies
  • 8 black peppercorns
  • 1 tsp cumin seeds
  • 2 cloves garlic
  • 2 tbsp tamarind pulp
  • 1/2 cup semolina
  • 1 handful fresh cilantro leaves
  • Oil for frying

Rita, who learned to cook from books and classes, became so well-known for her Goan cooking that she has been mentioned in cookbooks such as John Gregory Smith's “Mighty Spice Express” and was featured in Fox Traveller's “Twist of Taste.” She lives in a lovely home located very close to the Goa airport. She has a beautiful outdoor space and garden that houses a studio kitchen where she teaches cooking classes. She is delighted to teach two authentic Goan seafood dishes to guests, recipes featuring Goan food techniques and spices that you may never have tried before: rava fried fish and prawn and cauliflower caldine.
