You will need two large Pyrex glass dishes (or casserole dishes) that go in the oven
WHAT WILL YOU COOK TOGETHER:
Soutzoukakia (Greek baked meatballs)
Roasted Greek Eggplant with Feta
1 lb (~1/2 kg) ground (minced) beef
2 garlic cloves, crushed
1 tsp ground cumin
1 tsp cinnamon powder
1/2 tsp ground allspice
2 slices stale bread, soaked in water
1 lb (~1/2 kg) classic baking potatoes, peeled
1/2 cup olive oil
1 can (14 oz) diced tomatoes or tomato sauce
2 big eggplants
1 red onion, chopped
3 cloves garlic, crushed
1 red chili pepper, minced (or red chili flakes to taste)
1 big green pepper, diced
1 can (8 oz) or 3/4 cup tomato sauce
1 cup (250 grams) Greek Feta Cheese
3/4 cup olive oil
1/2 cup fresh basil, chopped
Salt and pepper to taste

In addition to being a cookbook author, Fotini is an economist, MBA lecturer, writer and independent journalist. She started cooking and experimenting with recipes when she was a university student in Thessaloniki. She loves cooking authentic Greek cuisine from the islands, with Cycladic dishes being her favorite. Fotini has traveled around the world, studying, working and traveling for fun. In addition to her passion for cooking, she also loves reading, gardening and classical music. Fotini loves to host and meet people and is passionate about sharing dishes from continental Greece and the Greek islands with her guests. As Fotini says, meals in Greece are a way to celebrate with guests over great discussion and music. She loves meeting people from all around the world and when she travels she makes it a point to taste the local cuisine. This passion for cooking and traveling has made her a collector and she has over 100 cookbooks in her collection.
