Your host Shalini
Shalini completed her masters in computer science and now works part-time at her husband’s company. After she got married, Shalini learned to cook from her mother-in-law, an excellent cook who will co-host your Traveling Spoon experience! Shalini enjoys cooking traditional Rajasthani dishes with her mother-in-law, who has been cooking for the past 40 years, and is often seen experimenting in the kitchen. Cooking is Shalini's favorite way to relieve stress and she is passionate about sharing her Rajasthani culinary traditions and family recipes. Your menu includes two dishes, mixed dal, a scrumptious as well as healthy lentil curry and aloo gobi, a vegetarian dish made with potatoes, cauliflower, and Indian spices.

  • 1/4 cup whole red lentils + 1/4 cup split yellow pigeon peas + 1/4 cup spilt chickpeas + 1/4 cup spilt black lentil + 1/4 cup petite yellow lentils OR any lentils you have
  • Oil or ghee
  • 2 medium onions, finely chopped
  • 3 medium tomatoes, finely chopped
  • 1 teaspoon ginger, minced or paste
  • 4 tablespoons coriander leaves, finely chopped
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • A pinch of asafetida (optional)
  • 1/2 teaspoon mustard seeds
  • 2 cups (180 grams) cauliflower
  • 1 cup (2 medium size) potato
  • 1 tablespoon ginger garlic, minced or paste
  • 1 green chilly chopped (can skip this if you don’t like spice)
  • 2 bay leaves
  • 1/2 teaspoon cumin seeds
  • Salt

"Before the course I was contacted by Shalini and I received a PDF with the recipes. We also had contact online and I was helped finding the correct ingredients. Everything was very well organised. Shalini speaks very good english and the cooking was a lot of fun. The instructions were given step by step and the whole experience was adjusted to my own speed and my electric cooker. We made two dishes, mixed lentils and Chana Masala. Both are delicious and can easily be cooked by a beginner. I can fully recommend this course and would book again to learn another dish and to learn more about the indian culture."

"Shalini was very nice, willing to answer questions before, during, and after the class and customize recipes to what we wanted, and get up early to cook with us at 7am her time. It was a great experience to learn "homestyle" Indian cooking and we will make these dishes again. We took the class remotely, and Shalini had a phone mount I believe which helped us see each step she was taking so we could have a similar experience to in-person."
